here's 2 great refreshing recipes that is filling and not expensive





CHICKEN SPINACH SALAD


1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market


1 chicken breast, grilled or boiled, then diced and chilled.


1/4 c dried cranberries


1/4 cup chopped pecans or walnuts or both.


sunflower seeds


feta cheese


a viniagrette dressing





Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2








MEXICAN CABBAGE SALAD


1 cabbage, finely sliced


1 avocado, ripe, peeled and diced


1/2 bunch cilantro, finely diced


1 large tomato diced


1/4 c diced celery


1/2 brown onion, diced


1 fresh jalapeno, seeds removed then diced


Mayo


salt/pepper to taste





In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.


Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.


Chill for 1 hour and serve cold

If I were you, I would check out the recipes on labels of cans of Campbell's soup. On the front of some of the cans, it will say ';Great for cooking';. On the back will be one recipe and there will be 4 or 5 more under the label. they are always quick, good, simple recipes requiring usually only 4 or 5 ingredients. I like the ones on cream of onion, cream of chicken and cream of mushroom. But now you get the idea. Bon appetite

My favorite that I make is Salmon (skinned). All you have to do is cover both sides with lemon pepper and dried parsley. Put them on the broiler pan (spray with Pam cooking spray so they won't stick), broil the first side for 6 minutes then flip them over and broil for 5 minutes. It doesn't seem to matter the size of the salmon fillets - the time is the same if they are big or small. Any steamed veggie and a biscuit goes well with it. Great tasting and healthy - and QUICK.


Two other meat dishes that are healthy and easy... Chicken breast(s)/skinless sprinkled with ';Lawrence season salt'; and minced garlic (can buy jars of garlic at the store in veggie dept), wrap in foil, put in pan, bake for at least 1/2 hour at 350 degrees. And boneless pork chops; brown in a frying pan (use ';Pam'; cooking spray instead of butter in pan to brown), sprinkle with dried rosemary and minced garlic (I cook with lots of garlic - very good for you) and maybe pepper if you like, wrap in foil, put in pan and bake for 20-25 minutes at 350 degrees.

Death by Chocolate


1 box chocolate cake mix plus ingredients according to box


4 sm boxes of Instant Choc. pudding


4- 8-oz. cool Whip


* oreo cookies crumbs (optional)


* melted chocolate (optional)


* chopped heath bars (optional)


* chocolate chips (optional)


This really looks nice in a glass pyrex dish or a trifle bowl.


Bake cake according to directions.


and prepare pudding according to box.


When cake is cooled.


Layer as follows:


half the cake - crumbled


half the pudding ( 2 boxes prepared)


16 oz. cool whip


optional ingredients


Repeat-


* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.What are some really quick and easy dessert recipes?
Oreo Chocolate Mousse





Made a package of chocolate pudding. Fold in 2 cups whipped cream (not the canned variety). Crush 7-8 Oreos and place in bottom of a Pyrex dish (or something of the same size, doesn't matter...) Spoon the mousse in and top with more crushed Oreos. Chill 1 hour and dive in....so yummy and tastes like you slaved away. Who doesn't like Oreos?????
what you need:


a pint of strawberries, cleaned and sliced


8oz coolwhip for a bowl 16 oz for a 9x13


1 cont. strawberry yougart or 2


angel food cake. If in a hurry buy a already made one.


You can make this in a glass bowl or a 9X13 pan .


Tear 1/2 of the angel food cake in the bottom.


Mix together cool whip and yougart.


Spread 1/2 on top of cake pieces.


Add a layer of sliced strawberries


Repeat layers.


If you make in a cake pan you can cut it into pieces. In a bowl use a spoon.


Takes about 10min to make and is delicious!
Cut peach (or more than one) in half, remove the pit. Place peach halves in a baking pan with a tiny amount of water. Bake at 325 until the skins start to pucker 鈥?about 15-25 mintues. Place warm peach halves on plate, scoop vanilla (or your choice) ice cream into each half. Top with caramel sauce, desert wine or your choice of toppings.
Candy Bar Caramel Pie








Ingredients


2 (8 oz.) pkgs. softened cream cheese


1/2 cup brown sugar


3/4 cup Creamy Caramel Sauce, divided


8 oz. thawed Cool Whip庐


1 prepared graham cracker pie crust


2 regular size candy bars





Directions


Whip cream cheese with brown sugar and 1/4 cup Creamy Caramel Sauce. Fold in Cool Whip and candy bar pieces; spread in graham cracker crust. Warm remaining 1/2 cup Creamy Caramel in microwave; drizzle over top of pie. Freeze for 2 hours or refrigerate at least 4 hours. Keep remaining pie in refrigerator. Makes 12 servings.

Here is a good one I got from the Boyscouts.Pumpkin Crisp Cake. Ingredients: 1. 15 ounce can of pumpkin pie mix, 1 cup of evaporated milk, 1 cup of sugar, 1 tsp. vanilla extract, 1 tsp. ground cinnamon or to taste, 1 package of yellow cake mix-butter flavor, 1 cup of chopped pecans, 1 stick of butter. Directions: lightly grease bottom of a dutch oven or similar size pan. Stir first 5 ingredients together in bottom of pan. Mix cake mix as called for on box. Sprinkle cake mix evenly over pumpkin mixture. Do not mix together. Cut butter into slices and place evenly over cake mix, sprinkle with pecans and cinnamon. Bake at 350 degrees for 1 hour and 15 minutes or until golden brown. Hope you like it.
This is my very favorite. I use pecans instead of walnuts:

SEVEN - LAYER COOKIE BARS





1/4 lb. butter


1 c. crushed graham crackers


1 c. angel flakes coconut


1 pkg. Nestle chocolate chips (6 oz.)


1 pkg. Nestle butterscotch chips (6 oz.)


1 can sweetened condensed milk, NOT evaporated milk


1 c. walnuts meats, chopped





Melt butter in an 8 1/2 x 11 inch pan. Add layer by layer (do not mix) above ingredients in order listed.


Bake 32 minutes at 350 degrees in an aluminum pan OR 28 minutes at 350 degrees if a glass dish is used. Cut in bars when cool. Time baking carefully.
here ya go EasyBread Pudding


陆 pound of stale white bread, torn up or cut into cubes (1/2 loaf or 10 slices)


2 Cups milk


陆 - 2/3 Cup sugar


1 teaspoon vanilla


3 eggs


陆 cup raisins


1 teaspoon cinnamon





Preheat the oven to 325 degrees.


Put the bread cubes into a 9 by 13 inch baking dish. Sprinkle the raisins over the bread.


Combine the milk and egg, whisking with a fork to blend. Add the sugar, vanilla and cinnamon. Blend and pour over the bread.


Mix all together to make sure the bread is soaked with the custard and raisins are distributed throughout.


Place this baking dish into another larger dish to which water has been added. (Bain Marie) You want to add enough water to come 陆 way up the side of the baking dish. I measure out the water with the pan on the counter top, remove the pudding, place the water pan in the oven, then add the pudding into the pan in the oven. (This avoids spilling the water into the pudding as I put it into the oven.)


Bake at 325 for approximately 45 minutes. The pudding will be set and a little puffy. The puffiness settles a little as it cools, this is ok.

*******CHICKEN DORITO SURPRISE


1 bag Doritos


1 (16 oz.) Cheddar cheese, grated


4-5 boneless chicken breasts, cooked


1 can cream of chicken soup


1 can diced Rotel tomatoes


Combine in food processor: Cream of chicken soup, Rotel, 2/3 cup grated cheese and chicken. Line cake pan with layer of Doritos, then spread mixture on top of Doritos. Layer with Doritos again and top with cheese.


Cover and bake for 30 minutes at 350 degrees. Then uncover and bake for 10 minutes more. Serve with guacamole and sour cream.





******Beef Stroganoff Casserole





Ingredients


1 lb. Ground beef


1 can Cream of mushroom soup; condensed


8 oz. Sour cream


1 can (small) black olives; sliced


1 can (small) mushroom stems and pieces


12 oz. Egg noodles


Directions


Cook egg noodles according to directions and set aside. Cook ground beef until it is no longer pink. Drain off grease. Add soup, sour cream, olives, mushrooms, and noodles and cook until heated through.





Serves 4





********PARMESAN PORK CHOPS


6 center cut boneless pork chops


1 med. onion


3/4 c. mayonnaise


Approximately 1 c. Parmesan cheese


Garlic powder


Onion powder


Salt (optional)


Pepper (optional)


Sprinkle garlic powder, onion powder, salt and pepper on both sides of pork chop. Slice onion in thin transparent slices. Cover each pork chop with onion slices. Spread mayonnaise over top of pork chop (cover onions). Sprinkle Parmesan cheese to completely coat mayonnaise. Set oven at about 375 degrees. Bake for about 45 minutes until mayonnaise and cheese form a golden crust. Serve immediately. Enjoy!What are some quick, good, and easy recipes for dinner?
This is my family's favorite meal..


1 lb hamburger meat


2 tbs butter


1 pkg beef rice a roni mix


1 can beef broth


brown hamburger till just browned .drain off fat..


In the same skillet(empty) add butter and cook pkg to


directions on box. After rice is cooked add meat and pkg of seasoning that came with rice and broth..bring to boil then turn down to simmer till rice is tender..I serve this with mashed potatoes and a vegetable..Is also good with warm buttered bread..My son always puts the rice mixture on bread and eats it cold or hot..I have never had anyone not like it..My sons friends used to request it when they stayed over..Enjoy!

My favorite recipe is Chicken breast cut up in thin slices. And add ham and cheese in middle and roll it. Secure with toothpick. Add oil and butter to top of chicken and bake it oven. You can make pasta or rice to go with it. YUMMY!!!
If I'm in a huge rush, I usually either do grilled cheese sandwiches and tomato soup, or just rice with a scrambled egg and some soy sauce (like fried rice, but without all the extras).
I have two for you...if your family likes pasta, how about pasta salad; you will need rainbow pasta, fat free or low cal creamy salad dressing, black olives(sliced) and cheddar cheese... prepare pasta as usual.. when done, combine pasta, dressing, olives, and cheese while pasta is still hot and chill before dinner..nice side dish.! Main course; for a different meatloaf; use ground sirloin with stuffing instead of bread crumbs; combine all other ingredients as normal and bake it in a greased bunt pan for a ';round'; meatloaf... When done, put mac %26amp; cheese in the center...how's that?

1 pound skinless, boneless chicken breast halves - cubed


1 cup sliced carrots


1 cup frozen green peas


1/2 cup sliced celery


1/3 cup butter


1/3 cup chopped onion


1/3 cup all-purpose flour


1/2 teaspoon salt


1/4 teaspoon black pepper


1/4 teaspoon celery seed


1 3/4 cups chicken broth


2/3 cup milk





2 (9 inch) unbaked pie crusts





DIRECTIONS


Preheat oven to 425


In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.


In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.


Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.


Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving

1 can Cream of Mushroom Soup


2 cups cooked and chopped chicken


salsa or 1 can Rotel

2 cups grated cheddar cheese





DIRECTIONS


Preheat oven to 350. On a baking sheet, spread cream of mushroom on tortillas. Add a handful of chicken, salsa and some cheese to each. Fold over and spread more cream of mushroom on top. Press the tortillas closed all around the edges. Sprikle with more salsa and cheese. Bake for 15-20 minutes or until the cheese is bubbly and the tortilla is semi crispy.





* Easy Pepperoni Pizza :)

1 package pepperonis


2 cups shredded cheese


1 jar spaghetti sauce


*whatever else you want on your pizza





DIRECTIONS





Preheat oven to 375. Spread sauce on each tortilla. Sprinkle cheese on top, space out pepperonis. Add anything else you want. We like to add onion and green olives to ours. Place in oven on a baking sheet. Cook for 20-25 minutes or until cheese is bubbly and totillas are no longer soft.





TASTES JUST LIKE A THIN CRISP PIZZA! No one would ever guess it's a tortilla used as the crust :)
Penne pomodoro - I used to order this in a restaurant until I figured our how easy it is.





Hot Italian sausage - slice and cook in a pan - 2or 3 will do


Saute in some chopped green pepper and onion


Pour over a can of chopped tomatoes


Cook and drain some penne (about a cup or cereal bowl full dry)


Add the penne and heat again in the pan. If it seems like too much penne don't put it all in.





You can add - more hot pepper - chop some pickled ones


Chopped black olives pitted.
rice a roni and baked potatoes





try the local fish market and serve with raw salad with kale and spinach

    This is VERY delicious and easy to make;





    Fettuccini Carbonara





    5 teaspoons olive oil


    4 shallots, diced


    1 large onion, cut into thin strips


    1 pound bacon, cut into strips


    1 clove garlic, chopped


    1 (16 ounce) package fettuccini pasta


    3 egg yolks


    1 cup heavy cream


    3/4 cup shredded Parmesan cheese


    salt and pepper to taste





    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.


    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.


    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper. Serves 6

    Chicken Fajita





    INGREDIENTS


    1 pound boneless skinless chicken breasts, cut into 2-inch strips


    1 tablespoon vegetable oil


    2 teaspoons chili powder


    1/2 teaspoon ground cumin


    1/2 teaspoon garlic powder


    1 small onion, sliced


    1 small green bell pepper, chopped


    1 cup salsa


    1 (8-oz) package shredded Monterrey Jack Cheese


    Tortillas


    Topping Ideas: Chopped tomatoes, shredded lettuce, sour cream

















    DIRECTIONS


    In a skillet, saute chicken in oil over medium-high heat for 5 minutes or until tender. Stir in chili powder, salt, cumin and garlic powder. Remove from skillet and set aside.


    Add onion and bell pepper to skillet ( I also like to add the spices in the skillet again for more flavor: 2 teaspoons chili powder,


    1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder) and saute for about 5 minutes or until tender)





    You can either serve this dish on tortillas like a regualr fajita, or it also goes well just as like a salad with black beans, rice, lettuce, etc. But the way that i usually make it is you just get a store bought pizza dough, roll it out to the size you need put it in a 425F oven for 10-15 minutes (until it starts to become golden brown) then put all the ingredients ontop of it (except for like sour cream lettuce and things like that) then pop it back in the 425F oven for about another 10-15 minutes (until the cheese is really nice and melted).








    Another nice dish is,





    Chop up some green zucchini, yeow squash, and onion and set aside.


    In a nice sized non-stick skillet over medium heat, put some olive oil in it and allow to heat up, while it is heating up, take some chicken cutlet-sized pieces of chicken and season with salt and pepper. Place in skillet until cooked, put aside.


    In the hot skillet, add just a little more olive oil alow to heat up and then place onion in it, allow to cook until it just starts to become tender. Add in the squash and zucchini. Season it with some more salt and pepper and also garlic powder along with some pressed garlic (or verly finely chopped). allow to cook until desired tendernes. Add a can of either whole or chunky tomatoes, allow to heat through. serve with chicken and or pasta or rice. (the best part about this dish is that you can prepare it at any time of the day, and when youre ready to eat it, just cook up the pasta or rice and re-heat the chicken and veggies)
    Pasta alla carbonara





    INGREDIENTS:


    1 lb. spaghetti pasta


    4 slices bacon


    2 egg yolks


    2 Tbsp. milk


    2 cloves garlic, minced


    1/2 cup grated Parmesan cheese





    PREPARATION:


    Cook the bacon in a heavy skillet until crisp. Remove from pan and drain on paper towels. Set bacon aside.


    Cook the pasta as directed on package. Meanwhile, combine the egg yolks, milk, and garlic in a medium bowl and beat until well blended.


    When the pasta is cooked, drain and immediately return to the pot. Stir in the egg mixture and toss thoroughly until combined. Add the bacon and cheese and toss again to coat. Serve immediately.





    OR





    Ingredients


    200g/8oz dried tagliatelle


    2 rashers streaky bacon, cut into lardons


    2 eggs, beaten


    100ml/3陆fl oz double cream


    100g/陆 tub cream cheese


    25g/1oz fresh flat leaf parsley, chopped


    freshly ground black pepper


    Method


    1. Half fill a large pan with water. Season with salt and bring to the boil.


    2. Cook pasta as per packet instructions.


    3. Heat a medium wok. Fry the bacon for 1-2 minutes, to seal.


    4. Pour in the eggs and stir occasionally for 1 minute. (You do not want a consistency like scrambled eggs.)


    5. Stir in the cream.


    6. Stir the cream cheese.


    7. Drain the pasta and gently mix it into the sauce.


    8. To serve, season with lots of freshly ground black pepper and fold in the parsley.


    NB. Soft fresh herbs should always be added to cooked dishes just before serving, to retain colour and flavour

    4 egg yolks


    1 egg white


    parmesan cheese to taste


    150ml double cream/heavy cream


    3 rashers bacon diced


    buffalo mozarella





    mix the eggs and cream in a bowl with some parmesan cheese, season with plenty of pepper.





    dice and fry off your bacon or you can use parma ham in a little oil and garlic





    when your pasta is al dente add the sauce plus the bacon to the drained pasta and let the heat of the pasta cook the sauce through. tear buffalo mozarella over the top and season again if needed

    you will need some parmesan or romano cheese


    some bacon or italian bacon (pancetta) or ham is fine too


    frozen bag of peas


    1/2 and half cream


    garlic powder


    penne pasta


    butter


    olive oil








    fry you bacon or ham


    you will need to take about 2-3 handfuls of the cheese


    and mix with 1 cup 1/2 and 1/2


    a 1/2 cup water


    mix well in frying pan with bacon or ham


    do it over med-low heat and consistently whisk so the cheese does not clump


    after you get a nice smooth cheese sauce mix the peas right on in


    mix a couple shakes of garlic powder


    salt and pepper to taste and pour over your penne





    you have just made penne carbanara!


    feel free to add real garlic and onion slices if desired!





    Did I happen to mention it is only like 10 bux to make and about 10-15 minutes of cooking time?


    boil your pasta as you start your sauce and your done in minutes and have a gourmet dish!

    Hot dog %26amp; bean stew--4-6 dogs cooked, open a can of baked beans, add catsup, brown sugar, spices to your taste and the cooked dogs. place in bowl add cheese to taste

    Very cool!!!! Here's an idea that might help you:





    Menu I:





    Meatloaf


    Mashed Potatos


    Fresh Green beans


    Apple Pie





    For meatloaf, take 2 lbs of lean ground beef and add 2 eggs, 3 T Worcestershire Sauce, 1 T kosher salt, 1/2 tsp fresh ground pepper, 1/2 yellow onion, chopped fine, 1/2 tsp garlic powder, 3/4 cup bread crumbs, 1/2 cup ketchup. Mix together and form into a loaf. Top with 1/2 cup ketchup mixed with 2 T mustard and 3 T brown sugar. Cover and bake at 350 degrees for 1 hour. Peel 6-8 large russet potatos and cover with water. Add 1 T salt and bring to a boil. Cook until fork tender and drain. Add 1/2 cube butter and 1/2 cup sour cream. Mash with potato masher. If mixture is too dry, add more butter and sour cream. Add salt and pepper to taste. For green beans, cut off dry ends and place in pan. Add enough water to come to 1 1/2 inches. Cover and bring to a boil. If you have some bacon and a little onion, chop them up and saute them. Add to green beans while they cook. Season with salt and pepper.

    I wanna make something different for dinner tomorrow and was wondering what some of your guys fav dinner recipes were, or if you know of some good sites to find some please include the recipe with your answer, the one I choose to make gets best answer.What are some quick and easy dinner recipes you all like?
    Let me just say that fresh green beans are in their prime right now. You can just steam them in a steam basket or make bean salad. That's a great side dish. I've been making bean salad as a side dish to take in little tubs to work for about 3 wks now.





    Bean Salad:


    I use canned garbanzos %26amp; kidney beans %26amp; steamed zucchini %26amp; green beans %26amp; frozen peas, %26amp; sometimes a sweet yellow bell pepper. Just fill up a 1 quart measuring cup %26amp; that will be the right amt. I use 1/4 c. Italian dressing or just sesame oil with tarragon added. That's about it. I used to cook beans from scratch, but I'm not into doing that right now except for steaming the fresh green beans.





    By the way, I would just serve fresh grapes or fresh figs for dessert that late in the day. They're so wonderful this time of year. I like the green grapes. Of course, warm apple crisp is wonderful, %26amp; apples are in their prime now, too. Then, too, Trader Joe's seashell-shaped chocolates or their UFO-shaped chocolates are simple %26amp; wonderful for dessert, perhaps in a divided dish with unsalted cashews. But then, people may prefer something lighter in the evening, such as fruit, %26amp; may not want the caffeine in chocolate so close to bedtime. Personally, I would never turn down dessert whatever it was.What are some quick and easy dinner recipes you all like?

    INGREDIENTS (Nutrition)


    * 2/3 cup packed light brown sugar


    * 1/4 cup cinnamon applesauce


    * 1 1/2 teaspoons ground ginger


    * 2 pounds boneless pork loin roast


    DIRECTIONS


    1. Preheat oven to 325 degrees F (165 degrees C). Lightly flour an oven bag.


    2. In a small bowl, blend brown sugar, applesauce, and ginger.


    3. Place pork roast in the prepared oven bag.Pour the brown sugar mixture over the roast. Seal bag, and cut several small slits in the top.


    4. Cook the roast 1 hour in the preheated oven, or until the internal temperature has reached 160 degrees F (70 degrees C).

    Get bunches of boxes of pasta, italian dressing, tons of veggies, pre cooked chicken strips (not frozen), beans (lima, chickpea, butter ...in a can, drained) After you get home from the grocery store, even if its a pain, prepare the veggies and put into veggie bags for easy grab.





    On any given night, make some pasta, drain, do not rinse, add some or all of the above mentioned and have a pasta salad.





    You could sub the pasta for rice, sub the dressing for any sauce you like.....chinese, mexican, salsa, terriaki, anything, and have an instant stri fry.








    Shrimp is cheap!!!! Buy shrimp, parsley, lemon, green onion, garlic, spaghetti noodles (or whatever you prefer), olive oil, real sticks of butter.





    Heat butter and olive oil (equal parts) in a pan, add garlic and onions, cook 5 to 7 minutes, add lemon juice, green onion, heat a minute, add shrimp, cook till pink, add boiled noodles and toss, add fresh parsley and serve with salad and bread (garlic).








    Thsi is an awesome bagel sandwich: spouts, provolone, cucmber, red onion, tomato, dill sauce (in the dressing isle, but a bottle of dill dressing), you could add turkey or ham. toast bagel, add stuff, awesome dinner. You could also add all that to a tortilla and roll up
    skillet beef stew


    Ingredients:


    1 pound boneless beef top sirloin steak


    2 tablespoons vegetable oil


    1 package (16 ounces) frozen vegetables for stew


    1 jar (12 ounces) beef gravy


    2 tablespoons Worcestershire sauce


    1/2 teaspoon dried thyme


    1/4 teaspoon pepper


    1/4 teaspoon garlic powder


    Directions:


    Cut steak into 2-in. x 1/4-in. strips. In a large skillet, cook beef over medium heat until no longer pink. Drain if necessary. Stir in remaining the ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until heated through.
    Pasta alla carbonara





    INGREDIENTS:


    1 lb. spaghetti pasta


    4 slices bacon


    2 egg yolks


    2 Tbsp. milk


    2 cloves garlic, minced


    1/2 cup grated Parmesan cheese





    PREPARATION:


    Cook the bacon in a heavy skillet until crisp. Remove from pan and drain on paper towels. Set bacon aside.


    Cook the pasta as directed on package. Meanwhile, combine the egg yolks, milk, and garlic in a medium bowl and beat until well blended.


    When the pasta is cooked, drain and immediately return to the pot. Stir in the egg mixture and toss thoroughly until combined. Add the bacon and cheese and toss again to coat. Serve immediately.

    Ingredients


    200g/8oz dried tagliatelle


    2 rashers streaky bacon, cut into lardons


    2 eggs, beaten


    100ml/3陆fl oz double cream


    100g/陆 tub cream cheese


    25g/1oz fresh flat leaf parsley, chopped


    freshly ground black pepper


    Method


    1. Half fill a large pan with water. Season with salt and bring to the boil.


    2. Cook pasta as per packet instructions.


    3. Heat a medium wok. Fry the bacon for 1-2 minutes, to seal.


    4. Pour in the eggs and stir occasionally for 1 minute. (You do not want a consistency like scrambled eggs.)


    5. Stir in the cream.


    6. Stir the cream cheese.


    7. Drain the pasta and gently mix it into the sauce.


    8. To serve, season with lots of freshly ground black pepper and fold in the parsley.


    NB. Soft fresh herbs should always be added to cooked dishes just before serving, to retain colour and flavour

    CREAMY CHICKEN POT PIE


    A family favourite. Satisfies everyone and is indeed tasty and creamy.





    Ingredients


    10 tablespoons unsalted butter, sliced


    1/2 cup all-purpose flour


    3 cups chicken broth


    1/4 teaspoon dried thyme


    1 bay leaf


    1 1/2 teaspoons shallots, minced


    1/2 cup celery, diced


    1/2 cup carrots, diced


    1/2 cup fresh peas(or frozen)


    1 cup fresh mushrooms, diced


    1 1/2 cups idaho potatoes, diced


    1 1/2 cups cooked chicken, diced


    1 cup heavy cream


    1 sheet frozen puff pastry, thawed and cut into 4 6-inch squares


    1 egg, beaten with


    1 teaspoon water


    sea salt %26amp; fresh black pepper, to taste


    cornstarch, to thicken, if necessary





    Directions


    1 Preheat an oven to 400潞F.


    2 In a large saucepan over medium heat, melt the butter.


    3 Add the flour and cook, stirring constantly, until the mixture smells fragrant and nutty, 1 to 2 minutes.


    4 Slowly add the broth, whisking until smooth, and bring to a boil.


    5 Add the thyme, bay leaf, shallot, celery, carrots, mushroom, peas, potatoes, and chicken.


    6 Sea salt and pepper (to taste).


    7 Simmer, covered until the potatoes are tender, 10-15 minutes.


    8 Thicken with cornstarch if necessary.


    9 Remove bay leaf and discard.


    10 Remove from heat and let cool for 5 minutes.


    11 Add heavy cream.


    12 Divide the filling among 4 ovenproof ramekins (1.5 cup/.35 lt) and place on a baking sheet.


    13 Brush the puff pastry squares with the egg mixture.


    14 Brush the rims of the bowls with water.


    15 Place 1 pastry square on top of each bowl, pressing lightly on the edges.


    16 Bake until the pastry is puffed and golden brown, about 15-20 minutes.


    17 Remove from oven.


    18 Let rest for 5-10 minutes before serving

    This is VERY easy to make and absolutely delicious !!!





    1 (18.25 ounce) package chocolate cake mix


    1 (3.9 ounce) package instant chocolate pudding mix


    1 cup vegetable oil


    4 eggs


    1/2 cup hot water


    1 cup sour cream


    1 teaspoon vanilla extract


    1 cup mini semi-sweet chocolate chips





    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt pan.


    Combine cake mix, pudding mix, oil, eggs, water, sour cream, and vanilla. Beat until smooth. Stir in chocolate chips. Pour batter into prepared pan.


    Bake for 1 hour. Allow to cool.

    Chicken and Rice


    My Family loves this and it will feed 4-6 people depending on their apatite





    3-4 Chicken breasts cut into bite sized chunks season with salt and pepper


    1/2 cup butter or margarine


    1 1/3 cups rice (Not Minute Rice- Real Rice)


    1 can French onion soup


    1 can beef broth or beef consomme soup





    Put your butter in a covered casserole dish and melt it in the microwave.


    Pour everything else in the dish and mix well.





    Bake covered at 350 for 1 hour. Our oven usually takes a little longer so I go about 1 hour 15 minutes.

    I have two quick, easy and awesome recipes that I make for my family. They even request these dishes!





    1. Put thawed chicken breasts in a large ziploc bag or bowl. Mix 1/2 cup Worchestershire sauce with 3/4 cup bottled Italian salad dressing (any brand). Pour sauce mixture over chicken to marinate. Put in fridge over night (or at least 4 hours). Grill chicken on BBQ grill or cook in oven until done. Discard the marinade. Serve with rice, pasta or as a sandwich. My kids like me to grill the chicken, top with provolone cheese and serve on a hamburger bun.





    2. Grill chicken breasts on BBQ grill. Season as desired with salt and pepper. Cut chicken into thin strips. Meanwhile, cook enough angel hair pasta for your family. In a wok or skillet, lightly brown 3 minced cloves of garlic and 1/2 cup finely chopped green onion (tops included). Add 1 cup finely chopped sun dried tomatoes. Once lightly browned, add 1/2 cup white wine (any type) and stir. Cook until the wine begins to bubble. Now add 1 jar of alfredo sauce (any brand) and heat thoroughly. Once bubbly, add the chicken. Serve the sauce over the pasta and top with fresh grated parmesan cheese.

    Simplest Roast Chicken


    1 5-6lb chicken,wing tips removed


    1 lemon -- halved


    4 whole garlic cloves


    4 tablespoons unsalted butter -- (optional)


    Kosher salt to taste


    Freshly ground black pepper to taste


    1 cup homemade or canned chicken broth -- water,


    fruit juice or wine, for deglazing














    Place oven rack on second level from bottom. Heat oven to 500 degrees.


    Remove the fat from the tail and crop end of the chicken. Discard the neck and giblets or freeze for making chicken stock later. Reserve chicken livers for another use.


    Stuff the cavity of the chicken with the lemon, garlic and butter, if using. Season the cavity and skin with salt and pepper.


    Place the chicken in a 12-by-8-by-1 1/2-inch roasting pan, breast-side up. Put in the oven legs first and roast 50 to 60 minutes, or until the juices run clear. After the first 10 minutes, move the chicken with a wooden spatula to keep it from sticking.


    Remove the chicken to a platter by placing a large wooden spoon into the tail end and balancing the chicken with a kitchen spoon pressed against the crop end. As you lift the chicken, tilt it over the roasting pan so that all the juices run out of the cavity and into the pan. Pour off excess fat from the pan and put the pan on top of the stove. Add the stock or other liquid and bring to a boil, scraping the bottom vigorously with a wooden spoon. Let reduce by half. Serve the sauce over the chicken or, for crisp skin, in a sauce boat.

    Note from author Barbara Kafka: ';If there is no lemon, garlic or butter on hand, Kafka says, roast the chicken without them. Or play. Use peeled shallots or a small onion, quarter ed. Add a couple of sage leaves or orange wedges. To avoid a smoky kitchen, be sure your oven is clean before you start and use the right-size pan.';
    Ranch Chicken





    Put chicken breasts in Pam coated oven-safe dish with lid. For 2-3 chicken breasts mix one cup Ranch dressing and 1/2 to 1 full tablespoon of flour (you want it thick, but not globby). Spread the ranch/flour mixutre over the chicken breasts and put in 350 degree oven for around 30-45 minutes. Take out of oven, always check that chicken is done (180 degrees internal tem). If chicken is done then add 1/2 cup shredded cheddar cheese, replace lid and put back in oven until cheese is melted.





    Very easy and very good. . .if you like ranch!
    Quick and Easy? Marinate the chicken breasts in your favorite salad dressing. I use Italian. Heat up a pan with a small amount of olive oil. When it's hot, add the chicken breasts and heat til a little brown on each side. That's it!!

    few hand fulls of carrots, celery and onions...and to water with salt and pepper and what ever spices you like the thought of and boil the entire works until the chicken is done (don't worry, it is nearly impossibe to overcook). when the chicken is done, you can use the broth to cook rice with.
    Crush cornflakes into a shallow bowl. Coat chicken with corn flakes, place in baking pan, drizzle with melted butter. Bake for about an hour at 350. It's just like fried chicken, without the fat and grease.

    Fry, bake, broil, grill, or put in a cooking bag.

    I just call this Pineapple Chicken. Even though it's got bell pepper. Sometimes I don't use bell pepper if I don't have any.





    You'll need:


    a couple lbs of boneless skinless chicken


    a bottle of teriyaki sauce


    a can of pineapple with juice


    A bell pepper





    I cube and cook a couple lbs of boneless skinless chicken with a bottle (about 12 oz) of teriyaki sauce, throw a can of pineapple juice in there with the juice, cook it on high for a lil bit til it starts looking halfway done, then I cut up a whole bell pepper and toss that in there. By the time the bell pepper is done the way I like (cooked, but with a little crunch), then it's ready.





    You can serve it over rice, but I don't know how to make rice, so my girl usually makes it, or we just eat it as is. I guess you could also use that micowave or boil-a-bag rice.
    4 to 6 chic breast


    1can mushroom soup


    1/4 c chopped onions


    1 can or frozen pkg of mix vegtables


    1tsp of salt


    1'4 tsp of paprika





    Mix soup, onions, vegtables, salt, place chic breast in cassarole dish, pour above ingredients over breast, sprinkle with paprika,place in oven at 350 for 1hr.
    Italian Style Chicken





    1 Jar of you favorite spaghetti sauce.


    4 Chicken Breasts.


    Oil


    Salt and pepper.


    Garlic


    Pasta








    In a frying pan heat pour enough oil to coat the bottom of the pan.


    When heated place chicken breasts in and fry just until the breasts are white. Not completely cooked.





    Add garlic powder or pressed garlic cloves. Add salt and pepper.





    Add Spaghetti Sauce.





    Cook Chicken breasts until completely done.(about 45 minutes)





    In a separate pot make the pasta according to the instructions on the package.





    You now have Italian style chicken.





    Total cooking time: About 45 Minutes.





    Serve the chicken over the pasta.
    You can cut them up and fry them and make chicken strips.
    I use DURKEE Grill Creations - New Oreleans Style Cajun Seasoning


    i sprinkle a little of the seasoning on the chicken breast then pan sear the outside of the chicken and place on a baking sheet and throw in a 350 degree oven for about 10-20 minute depending how big the breast are

    Try this easy open-face sandwich








    Toast a piece of bread, spread a thin layer of mayonnaise on it





    add a big thick slice of home grown tomato on it, sprinkled with salt and pepper





    add slices of cooked bacon on top of the tomato





    cover with slices of velveeta cheese so it covers the whole sandwich





    broil in the oven until cheese melts (not too long you will need to watch it carefully so it doesn't catch on fire)

    3/4 cup chopped pecans


    2 cups flour


    1 Tbsp. baking powder


    陆 tsp. salt


    1 stick butter, softened


    戮 cup brown sugar


    2 eggs


    1 陆 tsp. vanilla


    1 陆 cups mashed ripe bananas (about 3)





    Preheat oven to 375 degrees. Grease muffin tins or line with paper cups.





    In bowl, combine foure, baking powder and salt.





    In another bowl, cream butter, sugar, and vanilla until smooth and creamy. Beat in eggs one at a time. Add mashed bananas and beat until combined.





    Stir dry ingredients into banana mixture just until flour disappears. Lightly stir in nuts





    Spoon batter into muffin cups to the top. Bake 20 - 25 minutes, until toothipck comes out clean.





    Makes 12 muffins.

    Prepare taco meat according to taco seasoning packet directions





    In casserole dish, layer macaroni and cheese, then taco meat; repeat layers

    Homemade mac n cheese with chicken is good, cheap, quick %26amp; easy.





    4 pieces of chicken either baked then deboned %26amp; cut up or cut up then fried.


    1 pkg cooked macaroni


    1-2 cups grated cheese (depends on ur personal preference.





    Take a casarole dish (Large rectagular) %26amp; put about a 1/4'; of milk on the bottom. Then alternate layers starting w/ macaroni, cheese then chicken repeat until dish is full. On top sprinkle salt %26amp; pepper to taste and I like to add a dash of paprika. Put in the oven at 325 for aprx 45 mins.





    Its a great dish to prepare ahead of time so all you gotta do is throw it in the oven when you get home.





    My hubby and I had to work a lot when we first started out. on my weekends I used to just cook the meat and freeze it, defrost the day before i planned to use it, so when I got home all I had to do was heat up the meat (steak, chicken, pork) then add veggies and a side, dinner in 30 mins or less.





    Another good easy dinner is taking 1/2'; thick steaks and put shake %26amp; bake mix on a plate press the meat onto the shake %26amp; bake (both sides) then fry it up, make mashed taters and kernal corn, buy country gravy mix ( next to Lawrys seasoning at the grocery store just add milk or water) pour over top the steak and taters and u got a homemade chicken fried steak dinner. It s pretty easy and quick.





    A healthier quick dinner would be most fish fried, fresh squeezed lemon %26amp; pepper to taste, is good on almost any fish, a veggie side, and a cold cucumber and tomato salad with balsamic vinigrette (a salad dressing).





    you can eat a lot of the same meat just find new ways to flavor it. Or try ethnic dishes.





    Fajitas are good and surprisingly easy.





    Cut up steak or pork in strips, 1 can of diced green chilies, 1 orange bell pepper cut in strips, 1 med onion minced or diced, fry in skillet.


    lipton/Knorr makes a tasty chipotle rice that cooks in 8 mins just add water and 1 Tbsp of oil cook in saucepan, then heat up tortillas on stove top directly on burner, be careful it only takes 15 secs or so on ea side %26amp; use tongs to save ur fingertips.


    take the tortillas put rice in first then some of the meat mixture repeat to all tortillas and u got an easy mexican style dinner.

    Quick Mozzeralla Cheese Bread:





    Take hamburger buns pull them apart and butter them, sprinke mozzeralla cheese (as much as you like) on them, put them in the oven on broil for about 5 minutes (the cheese melts fast).





    Goes good with chips and a soda ; )
    Try this if you like asian inspired noodle bowls! This is cheap and easy! I usually do a peanut/satay sauce, but you could use any sauce you prefer.


    First, get some water boiling in a saucepan for some ramen noodles. I like to use chicken, so I cube it up into about 1-2 inch pieces and saute it in a skillet with a little canola or veg oil. Cook over medium until it starts to get golden. remove chicken from the pan and add about 1/3 cup each of creamy peanut butter and soy sauce, and a can of coconut milk, whisk together until smooth and add the chicken back in. Turn down to low heat and simmer for a few minutes until the satay sauce gets thick. In the mean time drop in your ramen noodles and some peas and carrots (a few handfulls if you like them) and boil until just done (not very long- ramen cooks fast!) Drain and serve into bowls, top with the chicken and satay sauce, and garnish with some sliced green onions. If you like things spicy you can add some crushed red pepper flake to the oil, or even use chili oil to fry the chicken in. Good luck!
    I can't stand watching her but I love her cookbooks. Rachel Ray's 30 Minute Meals. Her recipes are really easy to follow and very delicious.
    You need two things: a wok and a slow cooker.





    A wok so you could stir fry stuff. Generic stir-fry recipe:





    Cut veggies and meat in bite size pieces.


    Heat wok. Add 3-4 tbs. of oil per pound of meat.


    Cook meat first (3 to 5 minutes, depends on the meat).


    Add sauce (buy from supermarket). Quick sauce is oyster sauce, water and cornstarch.


    Add vegetables.


    Stir fry for another 3 to 5 minutes.


    Enjoy !





    For the slow cooker, do this either overnight or before breakfast.


    Throw together tougher cuts of meat (beef is best).


    Cube carrots, potatoes, celery, etc. Include in slow cooker.


    Cover with water, spices, etc.


    Cook for six to eight hours (leave overnight or during the day).


    Great for soups, chili, stews, etc.

    Poppyseed Chicken





    3 to 4 Chicken Breasts


    1 can cream of chicken soup


    1 cup sour cream


    2 Tbs lemon juice


    陆 box or 1 roll Ritz Crackers


    1 Tbs poppy seeds


    陆 stick melted butter





    Boil chicken breasts and cut into bite sized pieces. Put into a baking dish. Cover with a mixture of soup, sour cream, lemon juice. Crush the Ritz Crackers. Add the poppy seeds to the crackers and spread over the casserole. Drizzle the melted butter over the mixture. Bake at 325 degrees until brown and bubbly.





    Can be assembled the day before and then bake before serving.

    1 lb ground beef

    Saute beef, onion and garlic with 1 tablespoon of olive oil, drain grease. Put back in pan. Add tomatoes, corn, kidney beans and seasonings and simmer for 15 minutes, or until thickened. Add to cooked egg noodles and mix. Stir in cheddar cheese and serve. This is good with a green salad and corn bread. Note: If you have a green or red pepper on hand, you can chop it up and add to the beef, onion and garlic during the sauteing process. Try this sometime.     Pasta with olive oil and garlic. Just sautee the garlic in the olive oil for about two minutes. Then toss the pasta in. You can add anything you like to this. Leftover veggies, seafood, poultry. Oh, and don't forget the parm cheese.
    Boil pasta of your choice. Drain. Toss with olive oil, a little salted butter, a shake of crushed red pepper, a squeeze of fresh lemon, and grated cheese. Add salt and peeper to your taste. YUM!! Enjoy your meal! :-)

    If it is pork tenderloin, as opposed to a plain pork loin, then I would first sear it in a pan. Forget the cream of mushroom soup. After searing all 4 sides, cook the pork in the oven at around 350 until it is done, around 155 degrees. You can put the onions and peppers in the pan with the pork, just add a little water so that they won't get burned. The garlic salt can go on the pork. Everything you listed can be used, but please, no cream of mushroom soup.

    (this piquant dish is easy to make from scratch, but to save time you could use ready made curry paste.)





    Half a red onion roughly chopped


    1 garlic clove roughly chopped


    2.5cm/1inch piece of root ginger roughly chopped


    1 red chillie, de-seeded and finely chopped


    1 tbspoon soy sauce


    1/2 tsp each of paprika,ground coriander and salt.


    1/2 tspoon lemon juice





    1 tbspoon vegetable oil


    half a 400ml tin of coconut milk


    2 chicken breasts diced


    1 tbspoon chopped fresh coriander.





    1. Put all the ingredients except the chicken breast, coconut milk and fresh coriander into a blender and blend until smooth.





    2.Pour into a heated wok, bring to the boil and cook, stirring continuously for 2 mins.

    My sister used to make a quick shrimp curry but I don't know why you couldn't just use chicken instead. Make some rice to put the sauce over. Precook the chicken (or shrimp), I'd just use the microwave for the chicken. Take a can of cream of chicken soup and add curry powder to taste (like a teaspoon or so) and mix with a 2/3 can of milk. Heat, mix with the chicken and pour over the rice. Doesn't get easier!

    Well, there are a good bunch of recipes for one or two people, but this is one of my favorites. You can adjust the heat and spice depending on your likes, but I bet you will enjoy it.





    1. Sweat diced onion and garlic in a bit of olive oil until translucent


    2. Add curry powder, paprika, and chili powder (amounts depend on your taste)


    3. Add several tablespoons of tomato sauce


    3. Dice skinless, boneless chicken breast and add to the pan


    4. Add about a quarter-cup of water and let the mixture stew until chicken is cooked through


    5. Serve over a bowl of rice and enjoy





    The final product comes out tasting like an Indian curry dish. It is always my go-to meal when I am home alone and I am sure you will enjoy it.

    My boyfriend and I did the same thing for a while and it wasn't easy. Sometimes we would cook a meal for two (or more) and freeze/refrigerate the rest.





    I got pretty good at making things with wraps. Either sandwich foods, chicken salad, quesadillas, fajitas, burritos, breakfast burritos... you name it, I put it in a wrap. :)





    Stir fries are always easy, healthy meals.





    Most meals that you usually make can be made for one as long as you make the right preparations. When you buy meat (including ground meat!), separate it into single servings before freezing. I've made lasagna for one by breaking up the noodles and baking it in a smaller dish.





    Get creative!
    Baked potatoes are always good. Easy to make just one.


    Steak pan grilled.


    any frozen vegetable steamed in the microwave. Just put 1/2 cup veggies in a glass dish with a lid, add 2 T. water, put the lid on and steam for about 4 min. Add salt and butter.





    Fry one piece of chicken and make 1/2 cup gravy using 1 T. of the meat drippings, 1 T. flour and 1/2 cup milk. Boil one potato and mash it and add salt, butter and a little milk.





    Buy the canned salmon which comes in the little 3oz. cans. Drain the liquid off and mix enough mayo in it to hold it together and make patties and pan fry.


    Boil one potato, when done, cut in cubes and fry in butter until brown and crispy on the outside.





    Grilled cheese sandwich and salad.





    One can of cream of chicken soup and 1/2 can of milk. Stir and heat. Pour over 2 slices of toast.





    Scrambled eggs with cooked crumbled sausage added to it. Toast and jelly.

    1 1/2 lbs. hamburg


    3 med. onions


    2 lg. green peppers


    2 cans whole tomatoes

    Saute onions and peppers in olive oil. In another skillet, brown hamburg, then add onions and peppers, tomatoes (crushed slightly), green beans and spices. Add sugar, if desired. Serve over cooked rice.

    Heat large skillet over medium heat. Add beef and onion, cook until beef is browned and onion is tender. Drain fat. Place beef mixture, chili powder, cumin, tomatoes, beans and salsa in crockpot; stir. Cover; cook on low 5 to 6 hours or until flavors are blended and chili is bubbly. Season with salt and pepper to taste. Serve with cheese, onions, olives and sour cream. Makes 4 (1 1/2-cup) servings


    Serving Suggestion: Serve with tossed green salad and cornbread muffins. Sometimes I add the chili to a bowl of fritos corn chips and then top it cheddar cheese and a dollop of sour cream





    Crockpot Chicken and Rice


    3 cans condensed cream of chicken soup


    2 cups uncooked instant rice (i use sucess rice)


    1 cup water


    1 pound boneless skinless chicken breasts


    or chicken breasts tenders


    1/2 tsp salt


    1/4 tsp. black pepper


    1/4 tsp. paprika


    1/2 c. diced celery


    Combine soup, rice and water in crockpot. Add chicken;


    sprinkle salt, pepper and paprika.


    Sprinkle celery over chicken. Cover; cook on low 6 to 8 hours


    or on high 3 to 4 hours.


    * or use 2 cans cr.of chicken and 1 can cr. of celery

    1 roast....any kind will do from chuck to bottom round....whatever cut you like. Will also work with pork roast.





    put a couple of tablespoons of oil in a frying pan big enough to hold the roast. Turn heat on high and let pan get hot.


    Sprinkle roast with kosher salt and garlic pepper both sides.


    Put roast in the pan to brown. Let it sit on each side 5 or 7 minutes or until it is seared.


    Put 1/2 can of beef broth in crock pot with some dried onions (use chicken broth with pork) Soup sized can of broth.


    Put roast in crock pot and pour the rest of the broth on top. Set the crock pot to low for 8-12 hours....it will be fork tender when done. If you are at home you can turn the roast over once half way through but this is not necessary.





    I always serve this with mashed potatoes and some other veggie that I cook on the stove....if you like gravy after removing the roast from the crock pot pour the broth into a pan and wisk about 2-3 table spoons of flour into it over medium heat. Keep stiring gravy with thicken as it reaches a boil. Enjoy.

    I have this recipe thats called Pulled Pork its really good and really simple;


    1 bottle of Dinosaur Bbq Sauce


    1/2 cup of orange juice


    1 pork tenderloin


    Directions;


    1.) Pour all the Dinosaur bbq sauce into a bowl and add the orange juice. Wisk together until combind.


    2.) In a 9in by 13in pan cover put the pork loin and slather in bbq sauce and let sit in fridgerator for 24 hours.


    3.) Put the pork loin in the crockpot on high for 3-4 hours.


    4.) After the pork is done place pork loin on a cutting board and take two forks and tear the pork apart.


    5.) Cover with left over sauce and serve.
    Crockpot Beef Stew





    Cooking Time 480 mins.





    1 pound beef stew meat


    3 carrots, peeled and sliced


    2 potatoes, peeled and cubed


    1 onion, peeled and sliced


    2 teaspoons dried italian seasonings, (adjust to taste)


    1/8 teaspoon ground black pepper


    2 Instant Beef Flavor Bouillon


    2 cups hot water





    In a slow cooker or crockpot coated with vegetable cooking spray, combine beef stew meat, carrots, potatoes, onion, Italian seasonings and pepper. Dissolve bouillon cubes in hot water and add to pot. Cook for 8 to 10 hours on LOW until tender.

    Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.





    Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

    Golden Mushroom Roast





    3 to 4 lb. beef chuck roast


    1 can Golden Mushroom soup


    1/2 soup can of water


    6 small peeled onions (optional)


    2 bay leaves (optional)





    Put 1/2 of the soup in the bottom of your crock pot, spreading it out. Mix the other 1/2 of the soup with the water in a small bowl. Place the chuck roast into your crock pot and put the onions and bay leaves around the side, if desired. Pour the soup/water mixture over the roast. Cook on low for 8 to 10 hours. Remove the bay leaves before serving.

    Easy Pepper Steak





    2 lbs. lean stew beef, cut into chunks


    1 can or jar of spaghetti sauce


    1 small or medium onion, thin sliced


    1 large green or red pepper, sliced into 1/2'; strips


    2 teaspoons of Kitchen Bouquet or Gravy Master (or, in a pinch, use 2 beef bouillon cubes)





    Mix everything together in your crock pot. Cover and cook on low for 6 to 8 hours. Serve over cooked mashed potatoes, rice, or noodles. Any leftovers freeze very well!

    Sirniki (Russian Cheese Pancakes)


    These Russian Fried Cheese Pancakes (Patties), prounounced SEER-ni-kee, are delicious served hot out of the pan – the outsides still crispy, the insides creamy… They are very easy, and the dough can be made ahead. Sirniki are usually served as a brunch or breakfast dish, or as a dessert, with sour cream or jam. Some like both!


    1 lb farmer cheese


    2 eggs


    2 tablespoons sugar


    1 teaspoon salt


    1/2 cup flour, plus


    extra flour, for dipping


    2 tablespoons butter, approx


    sour cream or jam, for serving


    3-4 servings





    1. In a food processor, pulse the farmer’s cheese until it is uniformly crumpled. Add the eggs, sugar, salt, and ½ cup of flour. Pulse or mix to combine. Refrigerate 1 hour, or even overnight. The dough will remain thick but sticky.


    2. Put approximately 1/3 cup of flour into a bowl, and use this to prevent the dough from sticking to your hands. Using 2 teaspoons, drop 1½” balls of dough into the flour, roll them round, and flatten to about 3/8” thick. Place them on a plate in a single layer until all the patties are all formed.


    3. Heat a frying pan with 1 T. butter, and fry the patties on each side until golden. You will need to add more butter as you go.


    4. Serve hot with sour cream and/or jam. This recipe will make approximately 20 small patties.


    5. NOTE: Farmer Cheese is usually found near the cream cheese; my store sells Friendship brand. These days, the packages are just under 1/2 pound (don't you hate this incremental downsizing?), and 2 packages will work fine.


    6. About the Times, Prep time is mostly frying time, and Passive time is the chilling time.











    Russian Potato and Mushroom Croquettes recipe -


    Cuisine: Russian


    • Ingredients


    7 potatoes, peeled


    5 c water


    1 onion, peeled and chopped


    400 g mushrooms


    1 tsp oil


    1 tbsp water


    1 salt and pepper, to taste


    1 c flour


    1 tbsp oil








    • Method


    Boil potatoes in water till tender. Drain and mash potatoes. In a separate pan, saute onions and mushrooms in oil and water over medium-high heat for three minutes. In a large bowl, mix mashed potatoes, sauteed onions and mushrooms, seasonings and flour together in a large bowl. Form croquettes. Heat oil in a large frying pan and fry croquettes over medium-high heat for 8 minutes on each side or until light brown.


    Serve with sour cream and chopped greens.











    Pskovsky Hot Vinegret recipe -


    • Ingredients


    3 ea potatoes


    2 ea carrots


    1 ea turnip


    5 tb canned peas


    Sauce:


    5 tb vegetable broth


    oil


    1 ts flour


    1 ea onion


    3 tb canned mushrooms


    celery and salt to taste

    • Method


    Wash vegetables, peel and cube. Then stew every vegetable (except peas) seprartely in a small amount of water. Combine and drain off vegetable broth.


    Sauce:


    Oil the pan, heat a little, add flour, stirring constantly. Then, very carefully, pour in the broth, so that there are no lumps. Add in finely cubed onion, celery, mushrooms and salt to taste. Cook on low heat for 15 minutes.

    What you do: Shred the cabbage. Cook the onion in 3 tablespoons of butter in a large pot or skillet until tender but not browned. In a small saucepan, heat the remaining tablespoon of butter, blend in the flour and stir in the tomatoes. Cook over low heat, stirring constantly until the sauce thickens. Stir in the sour cream, adding salt and black pepper to taste. Combine the sauce with the cabbage and simmer for a few minutes to blend the flavours.

    • Ingredients


    Filling:


    1 head of cabbage (small to medium)


    1 onion (medium)


    4 large eggs (hard boiled)


    1 lb (or 500g) ground beef

    Crust:


    -If you live in countries where a ready pie crust is sold in supermarkets, get 2 9-inch round crusts (any brand will work);


    -If you have to make the crust yourself, here are the ingredients for the dough:


    2 1/2 cups of flour


    1 teaspoon of sugar (regular or powedered)


    1 teaspoon of salt


    1 cup of solid vegetable shorteninng OR 1/2 cup of vegetable shortening and 8 tablespoons of unsalted butter OR 1 cup of unsalted butter


    1/2 cup of ice cold water

    • Method


    Filling:


    Finely cut the cabbage and onion; heat up a large skillet with 2 tablespoons of oil; when it is hot add chopped onion; satee the onion until golden brown; then add cabbage and cook on medium heat for 15-20 minutes or until golden in color and soft in consistency. Simulatenously, in a separate skillet satee the ground beef; cook it for 5-10 minutes or until the meat is of consistent brown color and there is no redness. Boil the eggs. When everything is ready, mix the cabbage, meat, and chopped eggs together; add salt and/or other spices. Your filling is ready!





    Crust:


    If you are making your own dough:


    In a large bowl thoroughly mix together flour, salt, and sugar. Then add shortening (broken in large chunks) or butter (cut into small pieces). Begin chopping the fat/butter with a pastry blender or 2 knives. When you are done, the mixture should be of coarse consistency; dry and powdery. Then drizzle over the mixture 1/3 cup + 1 tablespoon of ice cold water. Begin mixing the dough with a spatula until the mixture looks evenly moistened and begins to form small balls. Press down on the dough with the flat side spatula. If the balls of dough stick together, you have added enough water; if the do not, drizzle the dough with 1 to 2 tablespoons of ice cold water. Continue to mix the dough first with the spatula, then with your hands until it coheres. The dough should look rough, not smooth. Divide the dough in half; press each half into a round flat disk, wrap in plastic and refrigerate for at least 30 minutes before rolling. The dough can be frozen for up to 6 month in an airtight packaging (Thaw completely before rolling).





    When your dough is ready to roll, roll out 2 9-inch (~22cm) rounds. Place one crust on the bottom of a 9-inch pie pan; press the dough over the bottom and into the corners of the pan. Transfer the filling into the pan; smoothen the top. Place the second crust on top and seal the sides. The dough should not hang over the sides of the pan too much, otherwise it will char; you can either cut the excess dough with a knife, or fold it inside the pan. Before baking, cut 4 ventilation holes on the top crust of your pie. Bake in an oven pre-heated to 350F (175C) for 20-30 minutes or untill golden. When done, let the pie sit out for 15-20 minutes. Serve warm. Great with milk. Enjoy!!!

    4 medium prunes, pitted and cut lengthwise into narrow strips

    1. Soak currants and prunes in a bowl of warm water for 15 minutes, then drain and pat them dry with paper towels.

Reduce the heat to low and cook uncovered for 3 to 5 minutes, or until the nuts are lightly colored. Stir in the honey and rice, cover with 2 cups of water and bring to a boil over high heat.     boneless skinless chicken breast. place on top of stove in pan with about 1 cup water cover and let steam (20 min) add jar of salsa, cook for 5 more min. sprinkle with shredded mozzerella cheese and cover til cheese is almost melted. 1 min.

    Fry the steak of with the finely chopped onions in a large pan

    Tuna Sandwich. Use any type of bread (although Russian and Wheat are good) and tuna. You can put anything you want in tuna but you must have tuna (duh) and a little mayonnaise. I like to add chopped olives, pickles, and mustard. Some people also like onions. Just mix it up in a bowl with a spatula.
    Brown a pound of hamburger. Drain off the fat. Add two cans of stewed tomatoes. Simmer until most of the juice is gone. Stir in two cans cream corn. When corn is hot it's ready. This is my moms ';Easy Goulash'; recipe. You can add boiled pasta if you want.





    For an outstandingly wonderful chocolate dessert (requires a blender)


    Pour 1 1/2 cups of milk into a saucepan and heat to boiling.


    Put 2 cups of chocolate chips (16 oz) and 2 eggs, 1/4 cup of sugar and a pinch of salt in the blender. Pour in the hot milk and blend till smooth. Pour into little bowls or cups and chill in fridge at least 2 hours. We like to put a spoon of strawberry or raspberry or apricot jam in the bottom of our bowls and pour chocolate in on top. Plain or with fruit it's really rich and tasty.
    I just made a really easy beef stroganoff the other night. I used egg noodles, a pound of ground beef, onions and garlic, a half can of beef broth and about a half cup sour cream.


    Just boil the noodles, fry the ground beef with the onions and garlic and season with salt and pepper. Sprinkle a scant tablespoon of flour over the meat and stir it in, then deglaze the pan with the beef broth. Add the noodles and sour cream, stir, reseason if necessary. Quick and easy- you could have this on the table in 15 minutes!

    Disappearing Enchiladas


    I made this recipe up one day and it is always a big hit...it is also really simple to do!





    2 pounds ground beef


    2 packages beef chorizo


    1 cup Oaxaca cheese, crumbled


    1 can of green chiles


    1 large can chopped olives


    1 cup green onions, chopped, divided


    2 cups Mexican cheese blend, divided


    1 cup sour cream, divided


    Small flour tortillas


    1/2 cup half-and-half





    In a skillet brown the ground beef and drain; set aside.





    Next, thoroughly cook the chorizo in a skillet and drain; set aside.





    In a large bowl combine the beef, chorizo, Oaxaca cheese, green chiles, olives, 1/2 cup green onions, 1 cup Mexican cheese blend and 1/2 cup sour cream. stir until all the cheeses are melted.





    Butter a 9 x 13-inch glass baking dish. Spoon the mixture into the tortillas, about 3-4 tablespoons for each tortilla. Roll the tortillas into an enchilada shape and place side by side in the dish. When the dish is full, pour the half-and-half over the top of the enchiladas. Bake at 350 degrees F for 30 minutes, then sprinkle the remaining Mexican cheese blend and green onions on top and bake for another 5 minutes. Serve hot.





    Makes about 12 - serves 6.





    NOTE: If you have extra filling mixture left after filling the tortillas, it can be used as a great dip if served with Fritos.

    Barbecued Pork


    2 1/2 pork tenderloin, cut into large chunks, if necessary


    rub with salt, pepper, %26amp; chicken grill seasoning

    place in crockpot with the following ingredients: 1 onion, chopped;1 clove garlic, minced; 1/4 cup brown sugar; 1 teaspoon dry mustard; 1/2 cup ketchup; 1/2 cup white wine; 1 cup barbeque sauce ( I strongly recommend Sweet Baby Rays); 1/4 cup Worcestershire sauce


    Cook on high 3 - 4 hours or low 6 - 8 hours, until the meat shreds





    Here's a REALLY fast one:


    Honey Pecan Pork Chops


    1 1/4 pounds boneless pork loin, pounded thin


    1/2 cup all-purpose flour for coating


    1/4 - 1/2 tsp. chili powder


    salt and pepper to taste


    2 tablespoons butter


    1/4 cup honey


    1/4 cup chopped pecans


    splash of soy sauce


    In a shallow dish, mix together flour, chili powder, salt, and pepper. Dredge pork cutlets in the flour mixture. In a large skillet, melt butter over medium-high heat. Add chops, and brown both sides. Transfer to a warm plate. Mix honey, pecans, and soy sauce into the pan drippings. Heat through, stirring constantly. Do not heat too long or the sauce will harden. Pour sauce over cutlets.
    Take a steak, heat a frying pan a small amount of oil, a sliced onion.

    Strawberry Angel Food Cake





    1 storebought Angel Food cake, torn into bite sized pieces


    1 (8oz.) package no fat cream cheese, softened


    1 (12 oz.) container light whipped cream


    2/3 cup powdered sugar


    2 lbs. fresh strawberries, sliced





    With electric mixer, mix together the cream cheese, whipped cream and powdered sugar.





    In a large clear glass bowl, layer half of the cake, spread half of the cream cheese mixure over that, then half of the strawberries. Repeat layers, ending with strawberries.





    Chill until ready to serve.
    Want something simple? Throw the chicken in an olive oil, or your favorite oil, covered pan sautee until fully cooked. Remove the chicken then put a little more oil in pan and sautee some of your favorite chopped veggies (carrots, mushrooms, broccoli, bell peppers, onions, etc.). When veggies are done (you don't want them too soft because then all the vitamins will be gone, semi soft is good) Then add two cans of mushroom soup in the pan and heat on low. IMPORTANT: cook this on low so you don't scald the mushroom soup. Stir frequently. When soup is hot add chicken and cook on low for a few minutes. This is good over rice or cooked noodles. Sometimes I even boil noodles on the side and when the pan stuff is finished and the noodles are finished I put the noodles in the pan with the other stuff and mix it all together.


    Another easy one:





    Preheat oven to 325


    Boil your favorite noodles in a pot (I use two packs of ramen noodles, just the noodles not the spice pack, or two 2 1/2 cups of macaroni noodles)


    Open two cans of tuna fish, drain and flake with fork


    Get a cassarole dish


    Layer the noodles and flaked tuna fish- 1/3 of noodles first, then 1/2 of tuna fish (flaked or broke up with fork), cont. layering until finished.


    When finished layering crumble up a half of a pack of crackers and sprinkle evenly on top of the noodle, tuna layers.


    Put a few drops of butter on top of crackers evenly.


    If you like cheese you can put some cheese on top of each layer of noodle and tuna and then sprinkle some on top of the cracker crumbs.


    Cook in preheated oven until cheese on top is melted or crackers are slightly brown.


    It will be hot so be careful and enjoy.
