Baby Food- chicken --
Ingredients
2 teaspoons butter or margarine
1 teaspoon unbleached flour
1/4 cup milk
1/4 cup chicken, cooked,boned and shredded
1/4 large potato, boiled or baked and cubed
1 tablespoon grated white cheddar cheese or mild cheddar cheese (optional)
vegetables, of your choice (optional)
salt (optional)
Directions
1) Grill or bake chicken, remove bones and shred.
2) Bake or boil potato and chop into small cubes or mash.
3) Melt butter in a saucepan.
4) Add milk,flour, and cheese and make a sauce.
5) Add chicken and potato to it.

My mom boiled some chicken (or you can bake or grill it). she then takes the meat apart (shreds it or cut it into pieces) and uses the broth, tomato sauce, tomato chunks, broccoli florets and pasta together makes some great and very healthy and filling soup. The pasta and veggies will be tender so there shouldn't be too much trouble for a 15mo old to eat, just make sure it's not too hot! :)
My little nephew who is VERY picky with his food loved it. He usually does not eat very much and with this soup he actually asked for more!

The obvious would be to grill the chicken (on a bbq or in a skillet), or you could bake it in the oven. Then cut it up and put it in with the cooked pasta and veggies. Whatever sauce you want is up to you...you could go with just a butter sauce or a cheese sauce.
My 13 month old loves meals like this and it is easy for her to eat. She really goes for the veggies and pasta for than the chicken, and I think that is pretty normal for that age.
