Sweetie,there are so many options!!!Here are a few i enjoy personally:





Easy Cheesy Cauliflower


1 head of cauliflower cut into florets(throw away the core)


2 cans(per head of cauliflower) of Fritos Mild Cheddar Cheese Dip


Salt and pepper to taste





Boil or steam cauliflower until tender.Drain any liquid and place back into the pot with the heat OFF.Dump in Cheese Dip and stir.Salt and Pepper if needed





Kicked Up Grilled Cheese





One loaf french bread(youll want to slice it yourself)


Mozzarella cheese


Parmesan cheese


Tomato(thinnly sliced)


Basil or any herb you have on hand(tip:if you dont have fresh herbs,use dried and add a little extra virgin olive oil to make a ';paste'; and smear that on)


Salt and pepper

Slice french bread(You will need two slices per sandwich and i prefer slicing it thinnly).Butter your bottom bread on one side,with buttered side down.Layer mozzarella cheese,parmesan cheese.Next,layer tomato slices,you want them thin and you can use one or two per sandwich depending on your taste.Salt and pepper to taste,this will flavor your tomato.Next place your basil or herbs and top of with your other piece of bread.Butter one side,and place the butter side up.Heat a skillet and cook until golden on one side.Flip and heat until golden on the other side.Cut in half and serve with ice cold milk or green tea! Yum!!!





Broccoli Fettuccini Alfredo





One pound Fettuccini(or any pasta cut you desire)


Heavy Cream


Parmesan Cheese


Butter


Flour


1 package of frozen broccoli thawed(Of course you can use fresh cooked)





Boil a pot of water for pasta .When it comes to a boil,drop pasta in and cook until tender.Make sure you salt your water.Drop two tablespoons of butter.Once melted add two tablespoons of flour.Cook until it forms a ';paste'; or just a few minutes so that the raw flour taste cooks off.Add cream,and a few handfuls of parmesan cheese.Toss in pasta and broccoli and mix until coated.Top it off with a small pinch of salt and tons of black pepper.Serve with garlic bread or bread and butter.

EASY BLACK FOREST CAKE





Bake 1 sour cream chocolate cake mix according to box instructions. Bake in 2 round layer cake pans.





FILLING:





2 boxes vanilla instant pudding


2 env. Dream Whip


1 c. milk





Mix with electric mixer until creamy. Spread half over each layer of cake. Put layers on top of each other. On top layer spread Cool Whip (or whipped cream). Finally, spread 1 can cherry pie mix over whipped cream. This is a very easy cake that takes only a little over an hour to make, but looks like it took all day.
Irish Scones


Ingredients :


1 cup white flour


1/4 pound butter -- softened


1/2 teaspoon baking powder


1 egg -- slightly beaten


2 ounces sugar


2 ounces milk Sultanas (white raisins) optional


Walnut halves (optional)


Preparation :


Mix flour and baking powder. Add butter, and blend until the mixture is butter-colored. Add sugar and continue to mix well. Add half the beaten egg and all the milk. Add raisins or some nuts, if desired, mixing well to make a sticky dough. Turn dough onto floured board and knead for at least 5 minutes or longer. Cut dough into rounds and place on greased baking sheet or hot frying pan. Brush tops of scones with remainder of beaten egg. Place walnut halves on top, if desired. Bake at 350 to 375 degrees for about 15 to 20 minutes, or until brown. If preparing over an open fire, heat frying pan till very hot . Place scones in pan and cook for 7 to 8 minutes. Turn and cook for another 7 to 8 minutes.


Makes 6 scones.











Sausage %26amp; Potato Coddle


Ingredients :


1 pound pork sausage links


1/2 pound thick-sliced bacon, cut in 2'; pieces


4 large potatoes, (2 pounds)


2 large onions, sliced


1/4 cup chopped fresh parsley


salt and pepper, to taste


2 cups water


Preparation :


In a skillet cook the bacon pieces until they turn golden, and then drain on paper towels. Brown sausages (prick in several places with fork) in bacon fat; drain on paper towels and slice into 1/4-inch pieces. Peel and slice potatoes about 1/4-inch thick. In a casserole dish, alternate layers of bacon, sausage, onion, and potato, seasoning the potatoes with salt and pepper. Sprinkle each layer with a little parsley. Pour off all but 2 tablespoons of fat from the skillet. Add water and bring to the boil. Pour over the potato casserole. Cover and bake at 350 degrees for 45 minutes. Remove the cover and cook for an additional 15 minutes, until the top is browned and potatoes become tender.

Blueberry pancake mix, Just add water and cook. Serve with an egg on the side...bacon too if you have it.





In a pot, add a little olive oil, cut chicken tenders in 1 inch pieces and simmer until white, add a can of chicken broth and bring to a boil, turn of heat, add a handful of pasta elbows (that's enough for two people). Let stand for about 10 minutes. Add a little water if it becomes dry, Sprinkle with cheese.





Place pork chops in ';Shake and Bake';. I believe it takes 15 minutes in a 350 degree oven. While that is cooking, prepare instant rice. In the microwave, heat a can of peas in a dish with a little margarine or butter. On the side, apple sauce.

Mexican Tortilla Pizza





4 corn tortillas, or whole-wheat tortillas (6-inches in diameter)


1/2 cup Black Bean Dip, recipe follows


1 large tomato, seeded and diced


1 cup shredded green cabbage


1/4 cup chopped fresh cilantro leaves (optional)





Preheat the oven to 400 degrees F.


Place the tortillas onto a baking sheet and spread 2 tablespoons of black bean dip on top of each tortilla. Top with tomato and cabbage and bake for 10 minutes. Remove the pizzas from the oven and sprinkle some cilantro on each one. Allow to cool slightly before cutting into wedges.








Black Bean Dip:


2 teaspoons olive oil


1/2 medium onion, diced


1 clove garlic, minced


1 tablespoon minced jalapeno pepper


1 (15-ounce) can black beans, drained and rinsed


2 tablespoons lime juice


1/4 teaspoon ground cumin


2 tablespoons coarsely chopped fresh cilantro leaves


1 tablespoon water


Salt and freshly ground black pepper


Heat the oil in a skillet over a medium heat. Add onions and saute until they soften, about 2 minutes. Stir in the garlic and jalapeno and cook for 1 minute more.





Put the beans into a food processor. Add the onion mixture and the rest of the ingredients and puree until smooth.
