What are some quick and easy recipes?

I'm tired of waiting for my hubby to get home from work so late and not being able to put my kids in bed til 10 b/c I have to wait for him to get home with the food(works in a grocery store). Anyway, anybody have any fast recipes that maybe I could cook up real fast for a 16 month old and a 4 year old(by the way, the 16 month will eat anything).What are some quick and easy recipes?
My suggestion would be to feed the kids at dinner time and have a few groceries in the house, so that when hubby comes home with more food it can go in the fridge for the next night.


That way you are not slaving in the kitchen all hours of the night, and hubby just needs to 'nuke' his when he gets home.


Try Fried Rice, Pasta etc.


Pork Fried Rice.


Any leftover meat (chicken, pork, beef), make according to family size


2 lg. onions, sliced


Soy sauce


Garlic, celery %26amp; onion powder


Minute Rice


2 eggs.


Cut meat in small 1/2'; square pieces. Fry onions in very little oil until limp; stir in soy sauce. Mix cut meat; stir together, continue mixing. Add a little garlic powder, celery and onion powder.


Prepare Minute Rice according to directions. Add to above ingredients. Stir until well mixed. Taste and add any above soy sauce, garlic, onion, etc.


Now make a centre hole; put a little butter to grease pan. Beat 2 eggs slightly; add a little bit of garlic powder. Cook like scrambled eggs, very loose. Mix together with all above.


This is very tasty.





BAKED PENNE WITH MUSHROOMS AND CHEESES.


1 lb mushrooms, cleaned and thinly sliced


1 garlic clove, peeled, whole


4 T butter


salt and freshly ground black pepper


10 oz penne (about 2 1/2 cups dry pasta) - you can also use mostaccioi, ziti, etc.


3 oz Bel Paese cheese, thinly sliced or cubed - or any creamy, mild cheese (Havarti, Fontina)


1/3 cup freshly grated Parmesan cheese


3/4 cup heavy cream or half and half





SAUT脡 the mushrooms with the whole garlic clove in 2 tablespoons of the butter over a high heat.





ADD salt and pepper, lower the heat and cook for 3 minutes.





DISCARD the garlic.





COOK the pasta as usual.





DRAIN and dress with the remaining butter.





BUTTER an ovenproof dish and cover the bottom with a layer of penne.





DISTRIBUTE about a quarter of the mushrooms and the sliced cheese evenly over the pasta and sprinkle with 1 tablespoon of Parmesan.





ADD another layer of pasta and cover with mushrooms and cheese as before.





REPEAT until you have used all the ingredients, finishing with a layer of sliced cheeses.





POUR over the cream, sprinkle with salt and pepper and bake, covered with foil, in a preheated oven at 400 deg. F. for 10 minutes.





BAKE uncovered for a further 10 minutes, or until a light crust has formed on the top.





REMOVE from oven and allow to rest for 5 minutes before serving.What are some quick and easy recipes?

heres a recipe that i always make all you have to do is open and pour cans it cant get much easier, and it taste like its been in the slow cooker all day!





2 tablespoons butter


1 medium sweet onion, very finely chopped


1 1/2 pounds ground beef


2 cans red kidney beans, drained


1 jar marinara meat sauce (recommended: Paul Newman's)


1 package chili seasoning





In a large skillet over medium heat, melt butter. Add onion and saute until softened. Crumble in the ground beef and cook until browned. Add beans and marinara sauce and combine thoroughly. Stir in chili seasoning, reduce heat, and simmer for 15 minutes. Spoon into individual bowls and garnish with shredded cheese, a dollop of sour cream, and chives.
any number of sandwiches will probably do. all you need is a knife and some bread, plus the ingredients:





-peanut butter and jelly


-jelly and cheese (its supposedly really good)


-turkey %26amp; cheese (cheese optional)


-hotdog


-ham %26amp; cheese (cheese optional once again)


-etc.





that and a fruit or veggie side dish will suffice. :D
Beef Stroganoff





1 lb ground beef


1 bag wide egg noodles


2 cans cream of mushroom soup


1 (8 oz) canister of sour cream





brown beef, drain. boil pasta, drain. mix all ingredients together and simmer until hot.


Makes 4-6 servings. I always serve with buttered bread and salad!! Its so good... Its my favorite low cost meal!! Plus its EASY!!!

Easy French Dip Sandwiches





INGREDIENTS


1 (10.5 ounce) can beef consomme


1 cup water


1 pound thinly sliced deli roast beef


8 slices provolone cheese


4 hoagie rolls, split lengthwise








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Open the hoagie rolls and lay out on a baking sheet.


Heat beef consomme and water in a medium saucepan over medium-high heat to make a rich beef broth. Place the roast beef in the broth and warm for 3 minutes. Arrange the meat on the hoagie rolls and top each roll with 2 slices of provolone.





Bake the sandwiches in the preheated oven for 5 minutes, or until the cheese just begins to melt. Serve the sandwiches with small bowls of the warm broth for dipping.








Fettuccine with Sweet Pepper-Cayenne Sauce

INGREDIENTS


12 ounces dry fettuccine pasta


2 red bell peppers, julienned


3 cloves garlic, minced


3/4 teaspoon cayenne pepper


1 cup reduced fat sour cream


3/4 cup chicken broth


3/4 cup grated Parmesan cheese


salt and pepper to taste








DIRECTIONS


Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.


Meanwhile, spray cooking oil in a large skillet and saute red bell peppers, garlic and cayenne pepper over medium heat for 3 to 5 minutes.


Stir in sour cream and broth; simmer uncovered for 5 minutes. Remove from heat and stir in cheese.


Toss hot pasta with sauce and season with salt and pepper to taste; serve.

INGREDIENTS


2 cups kidney beans, cooked


1 teaspoon salt


2 tablespoons chili powder


1 teaspoon ground black pepper


1 (14.5 ounce) package corn tortilla chips


1 head iceberg lettuce - rinsed, dried, and shredded


2 large tomatoes, chopped


1 green bell pepper, chopped


1 onion, chopped


1 (10 ounce) can chopped black olives


1 carrot, shredded


1 cup shredded Cheddar cheese


1/2 cup sour cream


1 cup salsa





DIRECTIONS


In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.


To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.





Asian Beef with Snow Peas





';Stir-fried beef in a light gingery sauce. Serve over steamed rice or hot egg noodles.';

INGREDIENTS


3 tablespoons soy sauce


2 tablespoons rice wine


1 tablespoon brown sugar


1/2 teaspoon cornstarch


1 tablespoon vegetable oil


1 tablespoon minced fresh ginger root


1 tablespoon minced garlic


1 pound beef round steak, cut into thin strips


8 ounces snow peas








DIRECTIONS


In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.


Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.





Triple Decker Turkey Bacon Sandwich

INGREDIENTS


2 slices white bread


1/4 cup mayonnaise


3 lettuce leaves


1 tomato, thinly sliced


3 slices turkey bacon


3 slices Cheddar cheese





DIRECTIONS


Toast the bread slices.


Spread a thin layer of mayonnaise on each slice. Layer bottom slice with lettuce, tomato, turkey bacon, and cheese. Spread another thin layer of mayonnaise on the cheese; repeat layers twice. Top with second slice of bread. Heat in microwave for 45 seconds to 1 minute, or until cheese is melted.
