What are some quick and easy recipes?

I like to cook but my husband gets home so late at night I don't like it to be a long process. Unless it was like a crock pot meal or something. I need some ideas, Does anyone have anything they can share?What are some quick and easy recipes?
Hurry-Up Ham N Noodles

Recipe 1. Ingredients5 cups uncooked wide egg noodles


1/4 cup butter or margarine


1 cup whipping cream


1 1/2 cups julienned fully cooked ham


1/2 cup grated Parmesan cheese


1/4 cup thinly sliced green onions


1/4 teaspoon salt


1/8 teaspoon pepper

















2. Cooking Directions


Cook noodles according to package directions. Meanwhile, in a skillet over medium heat, melt butter. Stir in cream. Bring to a boil; cook and stir for 2 minutes. Add ham, cheese, onions, salt and pepper; heat through. Drain noodles; add to ham mixture and heat through.

Chicken Breasts Poached in Butter


4 boned and skinned chicken breast halves, halved


Salt and freshly ground black pepper, to taste


drops freshly squeezed lemon juice


pinch tarragon


parsley, chopped


4 tablespoons butter


Preheat oven to 400 degrees F. Spray a casserole with nonstick cooking spray.





Season the breasts lightly with salt, pepper, lemon juice and tarragon.





Heat the butter to bubbling in the casserole on top of stove. Roll the breasts in the butter and lay the wax paper over them. Cover hot casserole and set in the middle level of the preheated oven for 6 to 8 minutes, or until the meat is lightly springy when pressed with your finger. Remove them to a side dish.





You may serve them simply, pouring the butter sauce over the breasts, and decorating with a sprinkle of parsley.

Raspberry Bars


2 cups Bisquick脝 baking mix


1 cup quick-cooking oats


录 cup brown sugar, packed


陆 cup margarine


1 cup raspberry jam, seeded


Preheat oven to 400 degrees F. Grease square 9 x 9-inch baking pan. Mix


baking mix, oats and borwn sugar in large bowl. Cut in margarine, using


pastry blender until mixture is crumbly. Press half of the crumb mixture


into pan bottom. Spread fruit over crumb mixture to within 1/4-inch of


edge. Top with remaining crumbly mixture; press gently into fruit. Bake 25


to 30 minutes or until light brown. Cut into bars. Makes 16 to 24 bars.

Corn Dog Muffins


17 ounces corn bread/muffin mix, 2 packages


2 tablespoons brown sugar, packed


2 eggs


11 ounces corn, drained


5 hot dogs, chopped


Preheat oven to 400 degrees F.





In a bowl, combine corn bread mix and brown sugar. Combine eggs and milk; stir into dry ingredients until moistened. Stir in corn and hot dogs (batter will be thin). Fill greased or paper-lined muffin cups three-fourths full. Bake for 14 to 18 minutes or until golden brown. Serve immediately or refrigerate. Makes 1 1/2 dozen.

Quick Chicken and Noodles





4 skinless, boneless chicken breasts


1/4 teaspoon garlic powder


2 cups chicken broth


1/2 teaspoon dried basil


1/8 teaspoon ground black pepper


2 cups frozen mixed vegetables, thawed


1 (16 ounce) package wide egg noodles





In a medium skillet, saute chicken breasts over medium high heat for about 10 minutes, or until browned. If the chicken sticks at all, you can add a little of the broth. When chicken is browned, remove from skillet and cut into 1 inch cubes. Sprinkle with garlic powder.


In the same skillet heat the broth, basil, pepper and vegetables. Bring to a boil. Stir in the uncooked noodles and return the chicken to the skillet. Reduce heat to low. Cover skillet and simmer all together, stirring occasionally, for 10 minutes or until chicken meat is no longer pink and noodles are soft. Serve.

Quick Chicken Cordon Bleu





4 boneless, skinless chicken breast halves


2 teaspoons Dijon mustard


1/2 teaspoon paprika


4 slices fully cooked ham


1 cup soft bread crumbs


1 cup grated Parmesan cheese


1/4 teaspoon pepper


1/4 cup mayonnaise


SAUCE:


1 tablespoon butter or margarine


1 tablespoon all-purpose flour


1 cup milk


1/4 teaspoon salt


1/2 cup shredded Swiss cheese


2 tablespoons white wine or chicken broth





Flatten the chicken to 1/2-in. thickness. Spread mustard on one side; sprinkle with paprika. Top with a ham slice. Roll up tightly; secure with toothpicks.


In a bowl, combine the bread crumbs, Parmesan cheese and pepper.


Brush chicken with mayonnaise; roll in crumb mixture. Place in a shallow 2-qt. microwave-safe dish; cover loosely. Microwave on high for 7 minutes. Turn the chicken; cook 7 minutes longer or until juices run clear. Remove toothpicks; set aside and keep warm.


In a 1-qt. microwave-safe dish, heat the butter on high for 30 seconds; stir in the flour until smooth. Cook, uncovered, on high for 30 seconds. Add milk and salt. Cook 3-4 minutes longer or until thickened. Stir in cheese until smooth. Add the wine or broth. Serve over chicken.
