Place the asparagus on a cookie sheet. Add about two tablespoons of olive oil, some salt and pepper to taste. Toss well and roast uncovered in a 375 Degree oven for about 10-15 minutes.Any quick and easy recipes for asparagus?????
Melt some butter with minced garlic and pour it over the steamed asperagus or serve with hollandaise sauce
break off the ends ( about 1-1 1/2 inch) of the asparagus. wash and place them in a pot of water. bring the water to a boil. cook for 2 minutes. remove the asparagus, using tongs, from the boiling water. then run the asparagus under COLD water(do not let your faucet be on full power). this will prevent further cooking. makes sure the asparagus are cooled. then place them on a plate and put them in the frig. do not cover. when you are ready to eat the asparagus then place your desired portion on a small plate. heat for 25-30 seconds. then top them with grated Parmesan cheese. microwave again for 20 to 25 seconds. instead of the Parmesan cheese you could use hollandaise sauce. the remainder of asparagus leave on the original plate and loosely wrap with saran wrap. place back in the frig.
if you are going to eat the asparagus immediately, then using tongs, place the desired amount on your plate. sprinkle grated Parmesan or spread warm hollandaise sauce over the asparagus.
note: cooking time was for medium size asparagus. thin asparagus will take 30 seconds less and thick asparagus will take 30 seconds more in time.

Asparagus Oregenato
INGREDIENTS:
1 pound fresh asparagus, trimmed
2 cups seasoned bread crumbs
salt and pepper to taste
garlic powder to taste
1/2 cup grated Parmesan cheese
4 tablespoons butter, sliced
DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
Place asparagus in a 9x13 inch baking dish, and cover with bread crumbs, salt, pepper, garlic powder and Parmesan cheese. Lay slices of butter on top.
Bake, covered, for 30 minutes. Remove cover, and bake 5 minutes more, or until browned on top.
Asparagus and Cashews
INGREDIENTS:
2 tablespoons olive oil
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
1 bunch asparagus stalks, ends cut
1 tablespoon soy sauce
1/2 cup chopped cashews
DIRECTIONS:
Heat olive oil and sesame oil in a wok over low to medium heat. Add ginger, and stir-fry until slightly brown. Add asparagus, and stir-fry for a few minutes before adding soy sauce and cashews. Cook until asparagus is tender but still crisp and bright green, stirring frequently.
Sauteed Garlic Asparagus
INGREDIENTS:
3 tablespoons butter or margarine
1 bunch fresh asparagus
3 cloves garlic, chopped
DIRECTIONS:
Melt the butter or margarine in a large skillet over medium-high heat. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes.
Easy Asparagus
INGREDIENTS:
1 tablespoon olive oil
1/4 cup sliced purple onion
1 clove garlic, chopped
salt and pepper to taste
lemon pepper to taste
10 spears fresh asparagus
2 tablespoons white wine
1 tablespoon Parmesan cheese
1 tablespoon crushed whole wheat crackers
DIRECTIONS:
Heat the olive oil in a skillet over medium-high heat. Mix in onion and garlic, and season with salt, pepper, and lemon pepper.
Cook and stir until tender. Place asparagus in the skillet, and cook 8 minutes, turning occasionally to coat with seasonings.
Sprinkle wine into the skillet, and scrape up any browned bits.
Transfer asparagus to a shallow dish. Drizzle with remaining mixture in skillet, and dust evenly with Parmesan cheese and crushed whole wheat crackers.
If you have a steamer, put the asparagus in for 15 minutes with a few cloves of fresh garlic. It comes out nice and crisp with a hint of the garlic flavour. Mmmm good.

Asparagus Supreme
4 c. fresh or 2 (8oz.)pkg. frozen asparagus, cut up
1 can cream of shrimp soup
2 T. coarsely shredded carrot
1/2 c. sour cream
1 tsp. grated onion
1/8 tsp pepper
1/2 c. herb seasoned stuffing mix
1 T. melted butter
Cook asparagus until quick tender. Drain well. Combine next 5 ingredients. Fold in asparagus. Put into 1 qt. ungreased baking dish. Combine stuffing mix and butter. Sprinkle around the edges. Bake , uncovered, at 350 degrees for 30 min.
Asparagus Au Parmesan
5 C. cold water
2 lg. bunches asparagus, pared and washed
1/4 c. grated Parmesan cheese
** 1 1/2 c. heated light white sauce
1/4 tsp, nutmeg
Juice of 1 lemon
salt, pepper, paprika
**LIGHT WHITE SAUCE
2 c. milk
2 T butter
2 1/2 T flour
salt and pepper
Pour milk into sauce pan, bring to a boil.Remove and set aside. Heat butter in separate sauce pan. When hot, add flour and mix well.Cook 2 min over low heat. Add milk to flour very slowly, stirring constantly.Season sauce and continue to cook 10 min stirring frequently. Preheat oven to 375 degrees. POur water into roasting pan, add lemon juice and salt. Bring to a boil on stove top. Add asparagus to hot water and cook 8 to 10 min over med heat. When asparagus is cooked, remove and transfer to baking dish. Mix half of cheese into white sauce:add nutmeg and pour aver asparagus. Sprinkle with remaining cheese, paprika, and pepper. Bake 8 min in oven.

My grandma always boils it with butter and a little salt to taste. It also takes good bake with butter. But Make sure you snap off the ends because you cant eat that part.
steam some asparagus until just tender and cut into 1 inch or 2.5 cm lengths
Then heat some olive oil in a pan and gently fry some fresh sage leaves and garlic.
When the sage is browned, throw in the asparagus pieces,
squeeze some lemon juice over it and season well with freshly ground black pepper and salt.
Serve either hot or cold
Chop the hard ends off of the asparagus.
Place them on a baking sheet and coat with some olive oil.
Rub the oil all over the asparagus.
Sprinkle salt, pepper, and parm. cheese over the veggies and place into pre-heated oven set at 375.
Bake till tender about 15-20 min.
Snap off the tough ends and break or chop into 1 inch to 1.5 inch long pieces. Saute in a little butter and/or oil until tender crisp, sprinkle on a little soy sauce, a little lemon juice and some sesame seeds and red chili flakes if you like. As soon as the liquid evaporates, serve. An excellent, easy way to cook asparagus.
If you just happen to have some leftover steamed or grilled shrimp, they would be great in this dish.
