1 lb ground beef
1large onion diced
2 cloves garlic, minced
1 tsp kosher salt
1/2 tsp. fresh ground pepper
1 T. cumin
1 T chili powder
1 15oz. can of tomatoes with juice
15oz can of sweet corn
15oz can of kidney beans
1 package egg noodles, cooked and drained
2 cups of shard shredded cheddar cheese
Saute beef, onion and garlic with 1 tablespoon of olive oil, drain grease. Put back in pan. Add tomatoes, corn, kidney beans and seasonings and simmer for 15 minutes, or until thickened. Add to cooked egg noodles and mix. Stir in cheddar cheese and serve. This is good with a green salad and corn bread. Note: If you have a green or red pepper on hand, you can chop it up and add to the beef, onion and garlic during the sauteing process. Try this sometime. How about something simple at first like a sandwich!
Pasta with olive oil and garlic. Just sautee the garlic in the olive oil for about two minutes. Then toss the pasta in. You can add anything you like to this. Leftover veggies, seafood, poultry. Oh, and don't forget the parm cheese.
Boil pasta of your choice. Drain. Toss with olive oil, a little salted butter, a shake of crushed red pepper, a squeeze of fresh lemon, and grated cheese. Add salt and peeper to your taste. YUM!! Enjoy your meal! :-)
