Chili
2 pounds stew beef, cubed into bite sized pieces
1 large sweet onion
2 jalapenos, seeded and minced
1/2 (4 fluid ounce) bottle mesquite flavored liquid smoke
2 heads garlic, minced
1 (14.5 ounce) can diced tomatoes with jalapenos
2 (15 ounce) cans chili flavored beans with jalapenos
1 (14.5 ounce) can red kidney beans
1 (14.5 ounce) can tomato sauce with garlic and onions
1/2 cup SPLENDA庐 Brown Sugar Blend
Hot pepper sauce, to taste
Combine beef, onions, jalapenos, liquid smoke and garlic in a slow cooker.
Cook on low for 6 hours.
After 6 hours, add the tomatoes, chili beans, kidney beans, tomato sauce, SPLENDA庐 Brown Sugar Blend to the beef. Add hot pepper sauce if desired.
Cook for an additional 2 hours.
Taste the chili after 2 hours to determine the need for additional SPLENDA庐Brown Sugar Blend or hot pepper sauce.
Garnish with diced jalapenos, chopped and shredded onions, and cheese if desired.
Makes 12 servings.

Adrian Leon's Breast of Chicken with Manchamantal Sauce (Red Mole)
1 1/2 pounds chicken breast, skinless and boneless
1 ounce guajillo, seeded and de-veined
1 1/2 ounces anchos, seeded and de-veined
1/4 cup fried plantains
1 tablespoon raisins
1 pound plum tomatoes
4 cloves garlic, roasted
1 stick Mexican cinnamon
1 slice bread or challah
2 cloves, whole
2 black peppercorns
1 allspice, whole
1/2 tablespoon salt
2 tablespoons sunflower oil
1 cup fresh pineapple
1 large apple, cored and coarsely chopped
7 cups chicken stock
1 cup SPLENDA庐 No Calorie Sweetener, Granulated
Boil water in a 3 quart sauce pan to soak the chilies.
Blister the chilies on a dry Comal or cast-iron frying pan over medium heat. Place the chilies in a medium mixing bowl, pour the boiling water over and soak for 20 minutes.
Remove chilies from water and use a blender with a little of the chili water, as needed, to puree.
Press the blended mixture through a food mill or sieve to remove skins and set mixture aside.
Heat the chicken stock in a heavy 4 quart pot.
Poach the chicken in the stock over low heat for 35 to 45 minutes. Reserve the stock and set chicken aside on a plate.
Roast tomatoes in a pan over medium heat for 10 to 15 minutes. Remove tomatoes from pan to drain. Roast onions and garlic in same pan.
Blend tomatoes, fried plantains, raisins, garlic, bread, cinnamon, peppercorns, allspice, salt and 2 cups of the reserved stock until pureed and smooth, place in bowl and set aside.
Puree pineapple and apple together and set aside.
Heat the sunflower oil until smoking in a heavy 6 quart stockpot and pan fry the chili mixture. Stirring constantly for 10-15 minutes add the blended tomato mixture and continue to cook and stir for about 10 minutes, add the SPLENDA庐 Granulated Sweetener and keep frying 15 more minutes(thin with stock as needed). Stir in the pineapple and apple puree. Continue cooking until the mole is thick enough to coat the back of a spoon.
Place chicken in a wide bowl and ladle the mole over it.

Crab Quiche
3 tablespoons diet margarine
1 medium carrot, washed, trimmed, peeled, grated
1/2 medium onion, peeled, diced fine
1 medium zucchini, washed, trimmed, thinly sliced
1/2 medium red sweet pepper, washed, cored, diced fine
1/2 cup chopped parsley
8 ounces fresh, frozen or canned (and drained) cooked crabmeat
3/4 cup crushed saltine crackers
1 teaspoon baking powder
1/2 teaspoon ground white pepper
1 cup refrigerated or frozen egg product
1 1/2 cups fat-free milk
1. Preheat oven to 375 degrees F.
2. Spray large nonstick skillet with cooking spray. Add 1 tablespoon diet margarine and melt over medium heat. Add carrot, onion, zucchini, red pepper and parsley and saute until vegetables are just tender, about 5-6 minutes. Stir in crabmeat. Transfer mixture to 9-inch pie plate that has been liberally coated with nonstick cooking spray.
3. In medium bowl, mix crackers with baking powder and pepper; stir to blend. Using pastry cutter or two knives, cut in remaining 2 tablespoons diet margarine. Add egg substitute and milk and mix well. Pour mixture over crab mixture in pie plate.
4. Bake quiche until golden and puffed, about 35 minutes. Let stand for 5 minutes before serving.
I have several recipes that include pork green chile, pork carnitas, grilled chicken breast in a mole sauce, grilled spicy pork chops and/or steaks along with a variety of salads like a blue cheese wedge, greek salad, spring salad or an pasta salad. Not sure what you mean by Spanish. Hope you mean spanish food. Check out one of my favorite sites. I am not diabetic but I did notice a section for diabetic recipes. The site is http://allrecipes.com. This will bring you to the home page and you can go from there. Not only do they have great recipes, but they have people who have tried them provide ratings and reviews. It's fun and informative.
I get tons sent to me in my mail. You can also get many at the drug store. They always put a booklet out once a month and it is free to pick up. Also check out Web-MD and the Mayo Clinic site or just do a web search. They are all over the place.
