Quick and easy recipes for frozen sea scallops?

I love scallops and bought some but I don't know how to prepare them especially now that they're frozen. It's got to be quick and not too complicated.Quick and easy recipes for frozen sea scallops?

~Sea Scallops in Sweet Chili Sauce~





I don't cook with sea scallops often, but when I do I always make a mental note to use them more frequently. These delicious, sweet white morsels of shellfish are hard not to like. To ensure that the frozen scallops retain their natural juices, thaw them in the refrigerator rather than at room temperature. Don't marinate for longer than 10 minutes, as the lime juice will begin to ';cook'; the raw scallops and the flesh will become mushy on the stove top. You can serve with steamed rice.





* 2 tablespoons fresh lime juice


* 1 tablespoon fish sauce


* 1 teaspoon grated ginger


* 1 pound sea scallops


* 2 tablespoons vegetable oil


* 1/4 cup sweet chili sauce


* 2 tablespoons chicken broth


* 1/4 cup chopped fresh cilantro





To make the marinade, combine all the ingredients in a bowl and mix well. Add the scallops and stir to coat evenly. Let stand for 10 minutes. Drain the scallops and pat dry with paper towels.





Heat a wide, nonstick frying pan over medium-high heat until hot. Add the oil, swirling to coat the bottom. When the oil is hot, add the scallops and pan-fry, turning once, until golden brown, about 2 minutes on each side.





Meanwhile, in a small saucepan, combine the sweet chili sauce and broth. Bring to a simmer over medium-high heat and simmer until sauce thickens slightly, about 2 minutes.





Transfer the scallops to a serving plate. Drizzle with the chili sauce, garnish with the cilantro, and serve.

Put them in a pan, with butter, Green pepper, onions, and Tomatoes, Cook for about 15 mins....
Thaw-pat scallops dry, pre heat pan, add 2 tablespoons butter. Sear 2-3 minutes on each side. (should be firm)
2 ways:





#1. let thaw, saute with butter and minced garlic





#2. let thaw, in a small bowl, place 1 stick butter or margarine, 2 tbl. terriyaki, 1-2 tsp minced garlic, 1/2 tsp minced fresh ginger root, put in microwave and melt butter (with terr., garlic, ginger) once it has cooled slightly, marinade the thawed scallops and skewer on bamboo skewers that have been soaked in water. Grill over charcoal coals. You'll love this, and shrimp can be cooked the same way
Put them in a pan with some butter and garlic, pour in a little cream and white wine and reduce, sprinkle with some parsley and enjoy. Don't overcook them or they get chewy.
