Macaroni and Cheese
1 lb. box elbow macaroni
1 lb. mild Cheddar cheese, grated
1/2 c. margarine, melted
6 eggs
2 13-oz. cans evaporated milk
salt and pepper to taste
Cook macaroni in boiling salted water according to package directions. Drain well and dump into a big bowl. Add grated cheese, reserving 1/2 c. to sprinkle on top. Stir in cheese until melted. Stir in margarine and eggs; stir well to distribute evenly. Add milk. Mixture will be fairly liquid. Pour into 13x9'; pan, sprinkle with reserved cheese on top. Bake at 350F, for 45 minutes, until set. Serves 8.
Note: I cut the recipe in half for my smaller family, and it was worked out well鈥ever have leftovers.
Super easy, super cheap, best tasting chicken on the planet. My own creation.
1 whole chicken ($3-$4). rub it inside and out with kosher salt and fresh cracked pepper. stuff the cavity with a fist-full of fresh rosemary (i grow my own in a container on my back porch). drizzle with lots of honey. cover loosely with foil and bake at 375 for 1 hour. remove the foil and bake for another hour basting every 20 min or so until thermometer reads 180. let it rest for 5-10 minutes before serving. serves 4 very hungry people.
i usually serve it with couscous ($1.50) and a package of frozen veggies ($1-$2).
My general conclusions about feeding a family on a tight budget is this -
1. I grow my own herbs.
2. I take advantage of sales on packages of frozen veggies and stock the freezer. I find that I have less waste with frozen veggies.
3. Pasta is filling, inexpensive, offers lots of variety and healthy. Try the Barilla Plus variety. It is whole grain with lots of omega-3.
My kids favs is when I make baked macaroni and cheese. There's also taco's, not too expensive. Chicken fried rice. The fail proof spaghetti and meatballs, homemade sauce of course. Or, one more thing my kids love is ';cheapy'; pizza (regular slice bread, put pizza sauce, meats and cheese on it, then bake for 10 minutes in oven).

I'm a college student with a new place, so I know what it's like to be cooking on a budget. Have you ever heard of ';four ingredient cooking';? As the name suggests, it's a minimalistic approach to cooking that is obviously quicker, easier, and cheaper, but still delicious. I got it at Borders Bookstore for $8 I think. Some of the recipes are a little bit high brow, but most of them are great, practical family meals that work on a budget as you don't have to have too many ingredients to buy. I've tried a few of the recipes and they actually taste great... you'd be surprised what you can do with four ingredients!

It's not a four ingredient cookbook, however... its focus is on making simple skillet family meals that usually take about 30 minutes to make. I've had a few in there, and they are great.
The best thing is, both of these books I've suggested have a gourmet feel to them, but you don't have to pay gourmet prices to make the meals. Hope that helps!
