I love to cook. So do anyone have some quick and easy recipes?

YANKEE POT ROAST, COLE SLAW AND JELLO:





Pot roast using the slow cooker


2 lb chuck roast


1 pkg lipton onion soup mix, dry


1 can cream mushroom soup, campbells


1 celery stalk, diced


1 onion, diced


2 whole carrots, peeled and cut


4 potatoes, peeled and cut in 1/4


1 crushed garlic clove


3 tbsp flour


1 Reynold's slow cooker liner, optional





The slow cooker liner makes cleaning up a snap!


In the crock pot, add the can of cream mushroom soup, a can of water, the lipton dry soup, flour and mix the ingredients well.





Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).





Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender! Serves 3-4








MEXICAN COLE SLAW


1 avocado, ripe, peeled and diced


1/2 bunch cilantro, finely diced


1 large tomato diced


1/2 cabbage, sliced and diced


1/4 c diced celery


1/2 brown onion, diced


1 fresh jalapeno, seeds removed then diced


Mayo


salt/pepper to taste





In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.


Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold





JELLO DESSERT


1 pkg large jello, any flavor


coolwhip


fresh fruit





Make the jello as on the package but use 1/2 cup less water.


Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.





Put the mix in a glass, and top with more fresh fruit or coolwhip.

Stir Fry's are always good. You can choose a variety of vegetable and meats and make variations. Variety of sauces you can create and very healthy and tasty.


I also Like a variety of pasta dishes because weather you make your sauce or use a jar sauce they can be healthy quick and good. Many recipes can be found in the net. Here's' one of my favorite sites and if you have time you can watch the preparation before you even attempt to fix it. Have a good one.

here's a favorite





2 dozen small shrimp.


1 dozen jalapeno peppers. split in half, deseeded.


1 - 1lb package of bacon, cut strips into thirds





place shelled and deveined shrimp inside a jalapeno half.


wrap with bacon and secure with toothpick (wooden NOT plastic).


toss on the grill for about 3-4 minutes, flip once and 2 minutes more.





serve on a platter.


it makes a great hors d'erves (sorry cant spell in french).

you can replace the shrimp with chicken breast pieces. or steak or any other meat you like.
Sciue Sciue is 'slang' Italain for 'Quick quick' (pronounced Shu-way Shu-way)


This is quite possibly my favorite dish that has no meat. It's great and easy.





1 1/2 cups (about 6 ounces) ditalini pasta (thimble-shaped pasta) or other small tube-shaped pastas such as elbow macaroni or pennette


1/4 cup olive oil


2 teaspoons minced garlic - (or more- to taste)


5 plum tomatoes (about 1 pound), chopped


8 ounces cold fresh mozzarella, drained, cut into 1/2-inch cubes


8 large fresh basil leaves, coarsely chopped - (or more- to taste)





Bring a large saucepan of salted water to a boil (use coarse salt and add after water boils). Add the pasta and cook until tender but still firm to the bite, stirring often to prevent the pasta from sticking together, about 8 minutes. Drain. -Tip- if you add a splash of Olive Oil to the water, it will help with the pasta sticking...





Meanwhile, in a heavy large skillet, heat the oil over medium heat. Add the garlic and saute until fragrant, about 1 minute. Add the tomatoes and saute just until heated through, about 2 minutes. Add the cooked pasta. Remove the skillet from the heat. Add the cheese and basil, and toss to coat. Season the pasta, to taste, with coarse salt and fresh ground pepper. Spoon the pasta into small serving bowls and serve immediately. (the cheese melts quick)





Serve with fresh crusty rolls or bread, green salad or just on it's own. (or a steak :) )

This is a very quick and very easy recipe....doesnt involve much actual cooking. You take some boneless skinless chicken and cut it into cubes and put it in a pan or pot and cook it with a little butter or olive oil. Then you ad one or two packages of those rice dishes (ex. Lipton makes them) and prepare as directed in the same pot. It all mixes and is ready to eat. Or you could do the same thing with beef, and use the packages lo-mein side dishes or use a noodle dish with the chicken.
