Some quick and easy recipes?

By the time I get home from work its already past 6:00 and Im starving! I dont have too much time to spend cooking but I need some healthy and easy ideas....

Bean salads.... You just get a few cans of beans (I use garbanzo, navy, kidney and cooked fresh green beans) heat them up, add vinagrette and parmesan and almond slivers to taste. It takes about 20 minutes and you'll have leftovers for a few days. Healthy, quick and cheap.Some quick and easy recipes?
There are two websites I can recommend: AllRecipes.com and FoodNetwork.com. Both have search functions where you can look for recipes. Recipes can be sorted by difficulty and searched by ingredient. There are some great ideas for easy %26amp; quick healthy recipes.
Get yourself a bag of frozen chicken from your local grocer. Defrost a handfull of the chicken in the microwave. Throw chicken into a frying pan with 1 can drained green beans, 2 Tbsp sugar, salt and pepper, and 1/4 to 1/2 cup of teryaki sauce. simmer on medium heat for about 10 minutes, or until sauce consistency slightly thickens. Also goes well with rice.
Here's a recipe that I love to throw together. It only takes me about 25 minutes, and it's from Cooking Light, so it's healthy too.





Chicken and Leek Linguine with Tomatoes





4 (4-ounce) skinned, boned chicken breast halves, cut into strips


1/4 teaspoon salt


1/4 teaspoon garlic powder


1/4 teaspoon paprika


1/4 teaspoon ground red pepper


1/4 teaspoon black pepper


1/8 teaspoon ground cumin


Vegetable cooking spray


2 teaspoons margarine


3 cups sliced leeks (about 3 medium)


3 garlic cloves, minced


1 cup low-salt chicken broth


1/2 teaspoon dried basil


1/8 teaspoon salt


1 (14 1/2-ounce) can no-salt-added whole tomatoes, undrained and chopped


4 ounces linguine, uncooked





Combine 1/4 teaspoon of salt, garlic powder, and next 4 ingredients; sprinkle over chicken, and set aside.





Coat a large nonstick skillet with cooking spray; add margarine, and place over medium-high heat until margarine melts. Add the chicken, and cook 1 1/2 minutes on each side or until lightly browned. Remove from skillet; set aside.





Add leeks and garlic to skillet; cook over medium-high heat 3 minutes or until tender. Add chicken broth and next 3 ingredients; bring to a boil. Break linguine into 2-inch pieces; add linguine and chicken to skillet. Cover and cook over medium-low heat 15 minutes or until pasta is tender. Stir chicken back into skillet.
Simple Stuffed Green Peppers





1 large container spaghetti sauce


3 green peppers (cut to 1';x1'; pieces)


2 med. pkg seasoned or original meatballs





Pour in spaghetti sauce and add green peppers. Cook till peppers are softened. Then add the meatballs and and cook them through.


stir occasionally. Best served on rice.


Yeilds: 6-8 serving





Chicken Wraps





2 cups cubed cooked chicken breast (you can use caned chicken breast)


1 can whole kernel corn, drained


1 1/2 cups salsa


1 pkt shredded chedder cheese


1 10pkt medium tortillas warmed





In saucepan, combin chicken, corn, and salsa. Cook until heated through. Sprinkel cheese on tortillas. Then put the salsa mixture down the center. Wrap tortillas and hold together with toothpicks. Yeild: 8 to 10 tortillas
Boil two cups of penne pasta (I use the whole wheat pasta), while that's boiling pour some Olive Oil in a big skillet, added chopped fresh baby bella mushrooms, onions, and freash garlic (or McCormicks in the jar). Stir in a large can of sliced tomatoes and simmer for 10-15 minutes. Makes a great (and healthy) home made sauce for the penne. I usually serve it with grilled chicken. Takes a total of 20-30 minutes from start to eat!
seasoned %26amp; sauteed chicken breasts in a skillet and pour a can of fat free cream of mushroom soup over them, a small amount of water and a dash of thyme. let it simmer for 20 minutes with a lid on. Enjoy.





p.s. you can do this to any other type of meat too instead of chicken. a can of this soup saves any dinner day.
super quick and super yummy: shrimp scampi





preheat your broiler...can use the toaster oven too


6-12 jumbo shrimp - uncooked and defrosted


2-3TBSP butter


1TBSP garlic **i use a LOT of garlic, you can use less


bread crumbs





lay shrimp in single layer in a baking pan


melt butter, add garlic, drizzle over shrimp


sprinkle with bread crumbs


broil for 4-6 minutes or until turning pink


turn shrimp over, broil another 3-5 minutes





you can put this over pasta or on a salad - delicious!
