What are some quick and easy recipes for chocolate mousse?

I am a huge chocoholic and I love finding out new ways to cook things using chocolate. Right now, I am desperate to find out how to make chocolate mousse from scratch. YUM!What are some quick and easy recipes for chocolate mousse?
CHOCOLATE MOUSSE


Many of the fine-quality bittersweet chocolates sold at supermarkets typically contain 50 to 60 percent cocoa solids. If you choose chocolate with a higher percentage, your mousse may be slightly denser.


Active time: 45 min Start to finish: 7 hr (includes chilling)








2 cups chilled heavy cream


4 large egg yolks


3 tablespoons sugar


1 teaspoon vanilla


7 oz fine-quality bitter/ semisweet chocolate (not unsweetened), chopped


Garnish: lightly sweetened whipped cream





Heat 3/4 cup cream in a 1-quart heavy saucepan until hot. Whisk together yolks, sugar, and a pinch of salt in a metal bowl until combined well, then add hot cream in a slow stream, whisking until combined. Transfer mixture to saucepan and cook over moderately low heat, stirring constantly, until it registers 160掳F on thermometer. Pour custard through a fine-mesh sieve into a bowl and stir in vanilla.


Melt chocolate in a double boiler or a metal bowl set over a pan of simmering water (or in a glass bowl in a microwave at 50 percent power 3 to 5 minutes), stirring frequently. Whisk custard into chocolate until smooth, then cool.





Beat remaining 1 1/4 cups cream in a bowl with an electric mixer until it just holds stiff peaks. Whisk one fourth of cream into chocolate custard to lighten, then fold in remaining cream gently but thoroughly.





Spoon mousse into 8 (6-ounce) stemmed glasses or ramekins and chill, covered, at least 6 hours. Let stand at room temperature about 20 minutes before serving.





Cooks' notes:


鈥?Mousse can be chilled up to 1 day.


鈥?To vary the flavor, you can replace the 1 teaspoon vanilla with 2 teaspoons instant-espresso powder (dissolve it in the hot cream) or 3 tablespoons Grand Marnier or 2 tablespoons Cognac (either one whisked into strained custard).

Super Easy Chocolate Mousse





1 1/4 cups heavy whipping cream


2/3 cup any flavor chocolate chips





Combine 1/4 cup of the whipping cream with the chocolate chips.


Microwave for 1 minute or until mixture is smooth when stirred with a spoon.


Cool.


Beat the rest of the cream until stiff peaks form.


(don't let it turn into butter) Fold the chocolate mixture in to the whipped cream.


Chill and serve.





Kahlua Chocolate Mousse





180 g milk chocolate, broken


4 eggs, separated


1 tablespoon Kahlua (or other liqueur)


300 ml thickened cream





Place chocolate into a heat-resistant bowl over a saucepan of gently simmering water (see note).


Stir until melted.


Remove from heat.


Stir in combined egg yolks and Kahlua.


Allow to cool slightly.


Whip cream in a large bowl until soft peaks form (when beater is lifted from cream, the peaks will bend slightly).


Gently fold chocolate mixture through whipped cream.


In a clean, dry bowl, beat egg whites until soft peaks form.


Lightly fold egg whites into chocolate mixture until well combined.


Spoon into 4 individual dishes or 1 large dish.


Refrigerate for several hours until firm.


Serve with extra cream, chocolate flakes and berries.


Note: Chocolate may also be melted in the microwave on MEDIUM power.

Very easy! Basically just fold melted chocolate with whipped cream.





Mousse:


8 ounces semi-sweet chocolate, chopped


1 teaspoon vanilla extract


2 cups chilled heavy cream, divided


2 tablespoons Cognac or brandy


1/4 cup confectioners' sugar





To make the Mousse: Put the 8 ounces of chocolate in a large bowl. In a small saucepan, bring 1/2 cup of the cream, the brandy, and vanilla to a boil over medium high heat. Pour the hot cream mixture over the chocolate; set it aside for 5 minutes before whisking until smooth. Cool the chocolate mixture to room temperature, whisking occasionally.





In a large bowl, beat the remaining 1 1/2 cups cream until it holds a soft peak. Sift the sugar over the cream, and continue beating until slightly thicker; take care not to over whip the cream. Fold a third of the whipped cream into the chocolate to lighten the mixture. Fold in the remaining cream.
Ingredients


150 gms marshmallows


50 gms butter


250 gms semi-sweet chocolate chips


4 table spoons hot water


280 ml whipping cream, whipped


Flaked almonds





Directions


On the stove, put together the marshmallows and the butter and the chocolate chips and the hot water until the marshmallows and the chocolate chips have disappeared.


Remove from the stove and carefully fold in the whipped whipping cream.


Cool for 1 hour.


Garnish with flaked almonds and serve immediately..


NOTE: do not cool overnight as the mousse will harden.
EASY CHOCOLATE MOUSSE





2 eggs


12 oz. pkg. chocolate chips


1 cup hot milk


1 carton (12 oz.) Cool Whip or other whipped cream





In blender, blend eggs and chocolate chips together until smooth. Add hot milk and blend well. Pour into large bowl and let cool. Fold in whipped cream and refigerate.


12 SERVINGS
