Chill a tin of evaporated milk
melt a lemon jelly cool slightly and beat in the evap add a teaspoon of lemon juice chill a bit and beat and chill again. Leave it in a large bowl and let everyone help themselves.

Sunday roast drumsticks
Serves 2
Preparation time less than 30 mins
Cooking time 10 to 30 mins
The perfect choice for a festive dinner or a long, lazy Sunday lunch, these drumsticks are best served with rich gravy and red wine. Or, if you want an al fresco meal, press them around a wooden lolly stick and serve at a summer picnic.
Ingredients
3 heaped tbsp crumbled smoked tofu
3 tbsp dry sage and onion stuffing mix
250g/8oz can chestnuts, drained and mashed
425g/14oz can butter beans, drained and mashed
1 dessertspoon herbes de Provence
陆 lime, juice only
2 heaped tbsp coconut oil
salt and freshly ground black pepper
Method
1. Oil a baking sheet and preheat the oven to 200C/400F/Gas 6. Place all the ingredients, apart from the coconut oil, in a bowl.
2. Melt the coconut oil and stir into the chestnut mixture to make a dough. Mould the dough into whatever shapes you like. (Drumsticks are good for Sunday lunch or picnics.)
3. Place the shapes on the prepared baking sheet and bake for 30 minutes, turning once.
4. Serve the drumsticks with roast potatoes, broccoli drizzled with hemp oil, carrots cooked in orange juice, steamed Brussels sprouts and cranberry sauce.
Cucumber sandwiches:
INGREDIENTS
* 1 (8 ounce) package whipped cream cheese
* 1 (.7 ounce) package dry Italian-style salad dressing mix
* 1 (1 pound) loaf cocktail rye bread
* 1 cucumber, thinly sliced
DIRECTIONS
1. In a small bowl, mix whipped cream cheese and dry Italian-style dressing mix. Spread equal portions of the mixture on slices of the cocktail rye bread. Top each with a slice of cucumber.
Beans on toast
If you like pasta. Put blue cheese in double cream and melt. Taste and add whatever amount of cheese to your taste. Add fried smokey bacon or chorizo or panchetta.. Add to pasta.
If you dont like blue cheese use smoked salmon no bacon though. Season.
It takes minutes to make and tastes wonderful.
If it's friends then get meats, cheese and salads, some garlic bread and put it all on the table and let everyone pick away. This means you spend less time in the kitchen and more time drinking wine and having fun with your friends. Enjoy
Sausage %26amp; Peppers
1 pkg. each hot %26amp; sweet Italian sausage-cut in 1'; pieces
2 bell peppers (1 red, 1 green)-cut in 1'; pieces
1 sliced onion
1 can diced tomatoes (with roasted garlic, or basil/oregano)
Brown sausage in olive oil in large pot, until browned. Add peppers %26amp; onion and cook on med/high about 15 min. Add undrained tomatoes, lower heat, cover and simmer at least 45 min. Serve over rigatoni, mostaciolli, or whatever pasta you like. .... This can be made the day ahead and reheated. It can also simmer (very low) for hours if you don't know exactly when you'll be ready to eat.....

4. In a rush? Smithfield, Hormel, Armour have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen.

I serve them often with S%26amp;W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.
6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat meal into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.
