Can you give me some quick and easy recipes to encourage me to eat vegetables?

The best way to cook vegetables is to sautee them in some garlic and extra virgin olive oil. They come out delicious. I like to sautee asparagus and then sprinkle some balsamic vinegar on them to impart a sweet flavor. But plain asparagus...bland!

You could also steam broccoli and then melt cheddar cheese on top of them. I know a lot of people who enjoy eating broccoli prepared this way.

You could also added chopped veggies to soups, omelettes, and tomato sauce. These foods will conceal the veggie flavor, allowing you to benefit from its nutrients without actually tasting the veggies much.

Grilled vegetables are AWESOME. The best, tastiest vegetables to grill are eggplant, zucchini, and peppers. They come out soo delicious. Grilling vegetables causes the natural sugars in the veggies to caramelize, imparting a sweeter flavor. They also become meaty and juicy.

How to grill vegetables:

Cut eggplant and zucchini lengthwise, and quarter the peppers. Generously sprinkle with salt and let them sit at room temperature for at least 2 hours. Drain the water that the vegetables have released and rinse away the salt. Coat vegetables in olive oil and balsamic vinegar. Then place on hot grill, and grill about 5 minutes on each side. Peppers may take longer. Onced they have nice black grill marks on both sides, they are ready. Can you give me some quick and easy recipes to encourage me to eat vegetables?

Hi. Try making green beans with lemon juice and garlic, it's really good! I love doing it myself! If that doesn't work try green beans cooked with Canadian bacon. It's really good!! I hope this helps!!!!!!
Try chopping up some carrots and celery and dipping them into a pot of low-fat hummus. Tasty and very simple!
I like to lightly steam a mix of broccoli, yellow squash and zucchini. Sometimes I use my steamer, sometimes I just put a bit of water of chicken stock in a big skillet. I flavor them with garlic. And only steam just a bit, I like them to still have a crunch.
beans on toast................................
Stir fry veggies yum! Just add soy sauce and chopped up chicken. There you go, a whole meal. You can also add rice for a delicious rice bowl.
If you really dislike vegetables sneak them in things you really really like.

If sneaking a few vegetables into a pasta sauce, soup, casserole or meat loaf will increase vegetable consumption and decrease calorie intake, the whole family wins.
