My boyfriend and I live alone with our 2 1/2 month old son. Most of the things we cook leaves us with leftovers or when we buy stuff to cook and only use half the package so we don't have leftovers, it spoils. Also, it's hard for me to spend a lot of time all at once in the kitchen with a baby.
I'd like to find recipes that are healthy and don't produce an over abundance of food that will go to waste and are quick to make.
My son is nursing so i've found that I can't have overly spicy foods because it upsets his stomach. Also, for this reason, I am looking for decently healthy meals.I'm looking for Quick and Easy recipes?
Easy Chicken Marsala
INGREDIENTS:
12 tablespoons all-purpose flour
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1/4 teaspoon dried oregano
2 boneless, skinless chicken breast halves
1 1/2 tablespoons olive oil
1 1/2 tablespoons butter
1/2 cup sliced fresh mushrooms
1/4 cup Marsala wine

DIRECTIONS:
In a medium bowl, stir together the flour, garlic salt, pepper, and oregano. Dredge chicken in the mixture to lightly coat.
Heat olive oil and butter in a large skillet over medium heat. Fry the chicken in the skillet for 2 minutes, or until lightly browned on one side. Turn chicken over, and add mushrooms. Cook about 2 minutes, until other side of chicken is lightly browned. Stir mushrooms so that they cook evenly.
Pour Marsala wine over the chicken. Cover skillet, and reduce heat to low; simmer for 10 minutes, or until chicken is no longer pink and juices run clear.I'm looking for Quick and Easy recipes?

I have a good recipy for you. Cheese buger caserol.
Ground a pound of hamuger in a frianpan (oinon if desired)
Drain grease and pour in a caserol dish. Next layer it with cheese
sliced or shreded it is up to you. Then take a can of cream of chicken soup add it in on top . then take tatertops and place them on top to cover. Put it in the oven 350 degrees for about 30 min. I have 2 young daughters and they just love when I make it for dinner.
Buy a Cooking Light magazine. They have a section of recipes which, between prep and cooking, take 30 minutes or less. They are healthy, and made from staples in your pantry.

Buy a slow cooker - you can prepare the food in the morning, leave it all day and enjoy a great meal in the evening together.

One of us usually cooks while the other tends to baby or we will tag team the cooking. This is one of our ';fussy baby'; recipes!
Spaghetti is a great meat to cook while doing other things.
turn the water on to boil then go tend to baby for 5 minutes
pour sauce into the pot and turn on medium, check water, add a small handfull of pasta. (you can season sauce if desired) go check on baby.
return in 5 to stir sauce and pasta...
check pasta to see if it is ready,
drain and serve. Wash pots so you do not have to do them later.
We leave our son in his bouncer chair, within arms reach while we are eating.
as for left overs, I use them for lunches to save money, but you can judge the amount for two over time.
