Cooking for one, what are some quick and easy recipes?

my boyfriend and I are on opposite schedules so i basically have to fend for myself at night. I try no to do frozen foods, but to be honest they don't taste the best and aren't healthy for the most part. Other than salads , is there anything that is good for one person. I am tired of pasta and have had it any which way you can! So any suggestions (books, websites, etc) would be appreciated! Thank youCooking for one, what are some quick and easy recipes?
Well, there are a good bunch of recipes for one or two people, but this is one of my favorites. You can adjust the heat and spice depending on your likes, but I bet you will enjoy it.





1. Sweat diced onion and garlic in a bit of olive oil until translucent


2. Add curry powder, paprika, and chili powder (amounts depend on your taste)


3. Add several tablespoons of tomato sauce


3. Dice skinless, boneless chicken breast and add to the pan


4. Add about a quarter-cup of water and let the mixture stew until chicken is cooked through


5. Serve over a bowl of rice and enjoy





The final product comes out tasting like an Indian curry dish. It is always my go-to meal when I am home alone and I am sure you will enjoy it.

My boyfriend and I did the same thing for a while and it wasn't easy. Sometimes we would cook a meal for two (or more) and freeze/refrigerate the rest.





I got pretty good at making things with wraps. Either sandwich foods, chicken salad, quesadillas, fajitas, burritos, breakfast burritos... you name it, I put it in a wrap. :)





Stir fries are always easy, healthy meals.





Most meals that you usually make can be made for one as long as you make the right preparations. When you buy meat (including ground meat!), separate it into single servings before freezing. I've made lasagna for one by breaking up the noodles and baking it in a smaller dish.





Get creative!
Baked potatoes are always good. Easy to make just one.


Steak pan grilled.


any frozen vegetable steamed in the microwave. Just put 1/2 cup veggies in a glass dish with a lid, add 2 T. water, put the lid on and steam for about 4 min. Add salt and butter.





Fry one piece of chicken and make 1/2 cup gravy using 1 T. of the meat drippings, 1 T. flour and 1/2 cup milk. Boil one potato and mash it and add salt, butter and a little milk.





Buy the canned salmon which comes in the little 3oz. cans. Drain the liquid off and mix enough mayo in it to hold it together and make patties and pan fry.


Boil one potato, when done, cut in cubes and fry in butter until brown and crispy on the outside.





Grilled cheese sandwich and salad.





One can of cream of chicken soup and 1/2 can of milk. Stir and heat. Pour over 2 slices of toast.





Scrambled eggs with cooked crumbled sausage added to it. Toast and jelly.
ONE EASY MEAL





1 1/2 lbs. hamburg


3 med. onions


2 lg. green peppers


2 cans whole tomatoes


Olive oil


Garlic powder, oregano


2 cans green beans


1/2 c. sugar (opt.)


3 c. cooked rice





Saute onions and peppers in olive oil. In another skillet, brown hamburg, then add onions and peppers, tomatoes (crushed slightly), green beans and spices. Add sugar, if desired. Serve over cooked rice.
Grilled PBJ





Make a peanut butter and jelly sandwich and grill it in margarine in a skillet until golden brown on each side. Have a cold glass of mild with it and its great.
